Before you begin making deviled eggs you’ll want to make a batch of hard boiled eggs. If you’ve ever struggled to make a perfect hard boiled egg then I’ve got a few tips to help you out.

How To Perfectly Boil An Egg

If you have ever tried to hard boil an egg and ended up peeling half of the white off with the shell then try some of these tips below to get perfectly done hard boiled eggs.

Now there are a variety of methods that you can follow. You can use the method where you bring the water to a boil first then add the eggs and remove after they have boiled for a certain amount of time. Personally I like this easier method for making hard boiled eggs.

  1. Place the eggs in a saucepan that is just large enough to hold them in single layer. Add in enough cold water to cover the eggs by 1 inch. Heat over high heat until it reaches a rolling boil.
  2. Once the water is boiling then remove the pan from the burner. Cover the pan and let the eggs sit in the hot water for about 15 minutes for extra large eggs, 10-12 minutes for large eggs and 9 minutes for medium eggs.
  3. When the time is up drain the water out, cool them with cold running water or place them in an ice bath. Once cool remove the shells and refrigerate until needed.

Ingredients for Deviled Eggs With Pepperoni

  • Hard-Boiled Eggs – you’ll want to prepare a half dozen hard-boil eggs for this recipe. Allow the eggs to cool before slicing in half to remove the yolk.
  • Softened Cream Cheese – use your favorite brand of cream cheese. It’s the secret ingredient that makes gives the filling a smooth, creamy texture and one that most people don’t expect to find in deviled eggs.
  • Dijon Mustard – go with Dijon mustard over other types for its mild flavor.
  • Seasonings – you’ll be adding some salt, black pepper and a bit of paprika to these deviled eggs. Swap out the paprika for smoked paprika for a little spicy kick.
  • Pepperoni – you can use regular pepperoni or even turkey pepperoni for this recipe.

Deviled eggs are so versatile. You can mix in a wide range of ingredients into the egg yolk mixture to come up with delicious new deviled egg flavors. Want to switch these pepperoni deviled eggs up a bit? Then try mixing in the following into the egg yolks mixture:

  • 1/4 cup of finely diced tomatoes
  • 2 tablespoons of finely minced red onion.
  • 2 tablespoons fresh finely chopped basil. This will give the eggs a pizza like flavor when combined with the pepperoni.

Looking to top the eggs with something other than the pepperoni slice? Try topping each egg with these instead of the pepperoni:

  • Piece of dill pickle
  • A bit of fresh dill
  • A sprinkle of bacon bits
  • Other fresh herbs

How to fill the eggs

You can either use a spoon to scoop the filling into the egg whites.

Or my favorite way….use a sandwich bag to make a piping bag. These pictures will give you an idea of how to easily use a sandwich or freezer bag to make a piping bag.

Take a sandwich bag and fold the edges down. Stick the bag into a mug or cup. This helps to hold the filling so you can get it all the way into one of the corners.

Place the filling in the bag. Fold the bag back up and give it a twist right above the filling. You are trying to get the filling down into one corner of the bag.

place the plastic bag being used as a piping bag into a cup and fold down the edges around the cup

Once you have the piping bag ready then simply use scissors to cut the corner off. Don’t make a big cut or else this will allow a lot of filling to come out.

twisting the top of the bag containing the filling

Snip the corner and squeeze the filling into the eggs. Keep twisting the bag to get all the filling to stay down in the corner as you are using it.

How to store these Deviled Eggs

Hard boiled, peeled eggs and the filling mix can be made 1 day in advance and stored in the refrigerator. Store the filling mix in a piping bag or an airtight container. Spoon or pipe the filling into the egg halves when you are ready to serve them.

For the best results leftover filled deviled eggs can be stored in an airtight container in the refrigerator for 3 to 4 days. You’ll find that after that time the yolk mixture will begin to dry out.

Can deviled eggs be frozen?

No. Freezing hard boiled eggs will cause them to become rubbery and will make the filling mix watery. Make and use them within 7 days and store them in the refrigerator.

How long can you keep deviled eggs at room temperature?

Once you add the filling, deviled eggs can be prepared up to two hours in advance if sitting at room temperature. After that they should be refrigerated. If making and serving a large number of eggs at a party or gathering it is best to put some out to serve and keep some stored in the refrigerator until needed.

Swap out trays are they are emptied so you don’t have a large number of deviled eggs sitting at room temperature for hours and hours.

Looking to try some other types of deviled eggs? Why not try one of these deviled eggs recipe. They will make perfect appetizer at your next party, Easter brunch or family gathering.
