Adding in avocado gives the deviled eggs a delicious creamy texture while cutting back on some of the fat found in traditional deviled eggs. They make a great appetizer for just about any occasion as well as a delicious, high protein snack that can keep you going between meals.

Avocado Deviled Eggs
Let’s start with the part of making deviled eggs that most people ask about…. how to boil and peel them without having the shell stick and tear off pieces of the egg white. I hate when that happens.
Now there are a variety of methods that you can follow. You can use the method where you bring the water to a boil first then add the eggs and remove after they have boiled for a certain amount of time. Personally I like this easier method for making hard boiled eggs.
How To Perfectly Boil An Egg
Place the eggs in a large saucepan that is just large enough to hold them in single layer.
Add in enough cold water to cover the eggs by 1 inch. Heat over high heat to a rolling boil.
Once the water is boiling then remove the pan from the burner. Cover the pan and let the eggs sit in the hot water for about 15 minutes for extra large eggs, 12 minutes for large eggs and 9 minutes for medium eggs.
When the time is up drain the water out, cool them with cold running water or place them in an ice water bath. Once cool remove the shells and refrigerate until needed. If you’ve struggled with making hard boiled eggs that are perfectly done, with no green ring around the yolks and with shells that come off easily I suggest trying this method.

Ingredients for Avocado Deviled Eggs:
- Hard Boiled Eggs – you’ll want to cook, peel and cool your eggs before making this recipe.
- Avocado – you’ll need one ripe avocado for this recipe. I like to prep and freeze avocados when I’m able to buy them on sale. It not only saves me money but it allows me to have freshly mashed avocado for recipes on hand. - Mayonnaise – use your favorite brand
- Lemon Juice – adding this helps to keep your deviled egg filling from turning brown.
- Seasonings – Salt, Black Pepper and Paprika
- Optional – use chopped fresh parsley for a garnish
How to make Avocado Deviled Eggs:
Prepare, peel and cool your eggs.
Peel the avocado and mash it in a separate mixing bowl.
Cut the boiled eggs in half lengthwise and scoop out the cooked egg yolks into the bowl with mashed avocado.
Add mayonnaise, lemon juice, salt, and pepper to the bowl. Mix everything together until well combined.
Rinse the egg whites to remove any residue and pat them dry gently.
Transfer the avocado and egg yolk mixture into a piping bag and carefully pipe it back into the hollows of the egg white halves.
If desired, garnish the deviled eggs with paprika powder and parsley for added flavor and presentation.
Variations on Avocado Deviled Eggs:
Guacamole Deviled Eggs – give your avocado eggs a twist by adding in 1/2 teaspoon each of cumin, onion powder, garlic powder and 1/4 teaspoon of chili powder or cayenne pepper if you enjoy more heat. Mix in 2 tablespoons of finely chopped cilantro. Swap out the lemon juice with fresh lime juice.
Jalapenos – add in a tablespoon of finely chopped jalapenos (fresh or jarred jalapenos) into the avocado filling mixture. Top with a bit of finely minced red onion.
Bacon – let’s face it. Bacon is delicious in everything and adds delicious smokey flavor to the avocado filling mixture.
Classic Deviled Eggs – give these avocado deviled eggs a classic twist by adding in 2 tablespoons of Dijon Mustard. Top with a sprinkle of more paprika.

What can I use in place of mayo?
Not a fan of mayonnaise? It’s usually called for in many deviled egg recipe but can be swapped out. Try using Greek yogurt or even sour cream in place of mayo. Both taste great with the avocado.
How to easily fill the eggs:
You can either use a spoon to scoop the filling into the egg whites. Or my favorite way….use a sandwich bag to make a piping bag. These pictures will give you an idea of how to easily use a sandwich, freezer or plastic bag to make a piping bag.
Take a sandwich bag and fold the edges down. Stick the bag into a mug or cup. This helps to hold the filling so you can get it all the way into one of the corners. Place the filling in the bag. Fold the bag back up and give it a twist right above the filling. You are trying to get the filling down into one corner of the bag.
Once you have the piping bag ready then simply use scissors to cut the corner off. Don’t make a big cut or else this will allow a lot of filling to come out.
Snip the corner and squeeze the filling into the eggs. Keep twisting the bag to get all the filling to stay down in the corner as you are using it.
How to store Avocado Deviled Eggs:
Deviled eggs can be stored in the refrigerator for up to 2 days. You’ll want to store leftovers well covered with plastic wrap in an airtight container. This will help to keep the avocado in the filling from turning brown. The egg mixture will keep it’s green color for about 8 to 10 hours before it starts to slowly turn.
Can you keep the filling from browning?
The avocado will slowly begin to oxidize (turn brown) as time goes on. The addition of the lemon juice helps to extend this time a bit. But you will find that the avocado mixture slowly begins to brown after about 8 hours.
You can help extend the time that the color changes begins by keeping the filling in an airtight bag and filling the eggs right before serving.
The brown color doesn’t affect the taste. They just don’t look as appetizing as they did when they were first filled.
Can deviled eggs be frozen?
No. Freezing hard boiled eggs will cause them to become rubbery and will make the filling mix watery. Make and use them within 2 days. Keep them stored in the refrigerator until you are ready to serve them.
How long can you keep deviled eggs at room temperature?
Once you add the filling, deviled eggs can be prepared up to two hours in advance if sitting at room temperature. After that they should be refrigerated.
If making and serving a large number of eggs at a party or gathering it is best to put some out to serve and the others stored in the refrigerator until needed. Swap out the trays as they are emptied. This will keep the eggs fresh and looking their best when served.
