Easy Huevos Rancheros Recipe

Huevos Rancheros is a traditional Mexican breakfast recipe that your whole family will enjoy. The heart of this dish includes lightly fried eggs sitting atop crispy corn tortillas. From there you can add your choice of delicious toppings, ranging from refried beans to spicy salsa.

Huevos rancheros is a healthy meal that usually includes some type of pico de gallo or salsa. You can dress it up even more by adding a bit of crumbled cotija cheese, avocado slices or even a bit of guacamole.

Ingredients for Huevos Rancheros:

  • Extra Virgin Olive Oil – use olive oil or some other neutral flavored oil
  • Corn Tortillas – corn tortillas are traditionally used for huevos rancheros but you can always use your favorite flour tortilla
  • Large eggs – use large eggs for this recipe
  • Chili Powder – chili powder adds flavor with a bit of heat to this recipe. If you have Chipotle powder available to you then use that instead.
  • Salt and Black Pepper, to taste

Optional when serving:

  • Avocado – top each huevos ranchero with sliced avocado or even use a bit of guacamole
  • Fresh Cilantro – add a sprinkle of freshly chopped cilantro on each one when serving.
  • Monterey-Jack cheese – a bit of shredded cheese can be added or even try a bit of crumbled cotija cheese.

How to make Huevos Rancheros:

You can start with this optional step of frying up the corn tortillas to make them a bit crispy. Don’t want to fry them? Then you can always serve them as is.

Step 1: To fry the tortillas: Heat the olive oil in a large skillet over medium-high heat. Add corn tortillas, one at a time, to the skillet and fry for 15-20 seconds on each side, just until the tortillas begin to crisp around the edges. Transfer to a plate and blot off excess oil with paper towels. Repeat with remaining tortillas and set aside.

Step 2: Reduce heat to medium-low and fry the eggs sunny-side up in the leftover oil, just until the whites are set and the yolks are still runny. Season with chili powder and add salt and black pepper to taste. Remove from the heat and set aside.

Step 3: Top each tortilla with a sunny-side up egg and serve immediately with choice of diced avocado, fresh cilantro, shredded Monterey-Jack cheese, refried beans, and/or salsa on the side. Enjoy!

How to store Huevos Rancheros:

For the best flavor I wait to put the huevos rancheros together as my family is ready to eat them. I have found that storing leftovers that have been made on the corn tortilla ends up with a soggy tortilla when reheated. I prefer to store the different ingredients (fried eggs, corn tortillas, salsa, refried beans, etc) separately.

The ingredients can be stored in an air tight container for 3 to 5 days.

Does Huevos Rancheros have meat?

Typically the recipe is made with fried eggs and doesn’t include meat but that doesn’t mean you can’t add some to the recipe or even as a side dish.

Here are some delicious meat based recipes that you can serve with this dish:

Shredded Chicken – try taking some of this shredded crockpot chicken, tossing with a bit of salsa and adding it to this dish.

Carne Asada – this delicious beef dish isn’t just for tacos. Slice it thin and serve it with this recipe.

Pork Carnitas – juicy pork smothered in spices then slow cooked with orange juice and lime juice and then finished in the oven to create glorious caramelized crispy burnt ends. Carnitas makes a flavorful addition to this dish.

Barbacoa Beef – this amazing shredded beef would be a perfect side or topping to your huevos rancheros. So good and melt in your mouth tender.

What toppings can you add to huevos rancheros?

Just about anything you add to your tacos you can add to this dish. I like to serve this dish up with a variety of toppings and let each person build their own ranchero. Here’s some ideas:

Cotija – is known as “Mexican Parmesan”. It’s soft, it has a mild flavor, it’s a bit salty and the flavor mixes well with the other flavors in the dish.

Avocados – add slices or chopped pieces. The creamy texture and mild flavor of avocados goes well with this dish.

Guacamole – if you enjoy avocados with this dish then you might like this more flavorful version of avocados.

Sour Cream – a bit of sour cream goes well with the heat in the chili powder or any salsa you might use.

Cilantro – I LOVE adding cilantro to just about every Mexican styled dish I make. The bright flavor is amazing with any dish containing chili powder, cumin or salsa.

Pickled Onions – the tangy taste of pickled onions is an unexpected flavor that works with this dish.

Corn – try some plain sweet corn or try some pan charred corn with this dish. Even better serve some Mexican Corn as a side to this dish.

Vegetables – try some sauteed bell peppers and onions to this dish.

Jalapenos – if you love heat try adding a couple of slices of jalapenos to your huevos rancheros.

Salsa – top each huevos rancheros with a spoonful of your favorite salsa.

Hot Sauce – for those lovers of heat add a splash of hot sauce

Add some easy refried beans to the side and you’ve got a filling breakfast meal.
