Mediterranean Lemon Herb Chicken Recipe (keto, low carb)

Mediterranean Lemon Herb Chicken

Grilled Mediterranean Lemon Herb Chicken breasts

The chicken can be baked in the oven, air fryer or on the grill. No matter what method you use to cook the chicken it will come out delicious. During the cooler months I use my oven but in the summer I love to toss the chicken on my grill. Try marinated chicken wings on the grill…. so tasty!

Ingredients for Lemon Herb Chicken:

Boneless, skinless chicken breasts – use boneless, skinless chicken breasts or 1 to 1 1/2 pounds of your favorite type of chicken. This recipe is just as good with thighs, legs or you can even use it to marinate a whole roaster.

Olive Oil – this keeps the chicken moist while cooking and helps to spread the flavor of the marinade.

Lemon Juice – use fresh squeezed lemon or bottled lemon juice.

Red Wine Vinegar – red wine vinegar adds the best flavor to this marinade. If you don’t have it on hand you can swap it out for apple cider vinegar or even white vinegar.

Minced Garlic – use fresh minced garlic or jarred garlic.

Pesto – use your favorite brand of ready made pesto or your favorite homemade pesto recipe.

How to make Lemon Herb Chicken:

In a large freezer bag or a container mix together the olive oil, lemon juice, red wine vinegar, minced garlic and pesto.

Add chicken and toss to coat.

Place in refrigerator and marinate for 6 to 8 hours.

Place chicken on the grill and cook until a thermometer reads an internal temperature of 165 F.

Or place in a 400 degree oven and cook until the chicken is no longer pink and a thermometer reads an internal temperature of 165 F. Check out the USDA website to find out the best temperature to cook your chicken to depending upon which cooking method you use.

How to store leftover Lemon Herb Chicken:

Place any leftover lemon herb chicken into an airtight container and store in the refrigerator for up to 5 days.

What to serve with Lemon Herb Chicken:

Serve the chicken with your favorite low carb side dishes. Try one of these:

  • Try some grilled asparagus (3 net carbs per 10 medium spears).
  • Try a Mediterranean themed vegetable blend. Use a mixture of sliced strips of zucchini, bell peppers and eggplant drizzled with some balsamic vinegar. Roast it in the oven at the same time you bake your chicken. When you remove them try topping them with a bit of feta cheese. If you use a medium zucchini, a medium bell pepper and a cup of diced eggplant cubes it will make about 4 servings with 2 net grams of carbs.
  • Try a wedge salad topped with feta and a olive oil and balsamic vinegar dressing. A quarter of a small head of iceberg lettuce has about 1.5 net carbs. Add in the carbs found in your brand of feta and you have a super easy but low in carb side salad.

FREEZER TIP:

This recipe makes a perfect freezer meal. Simply double or triple the batch of marinade. Place your chicken into large freezer bags and top with the marinade. Make sure the chicken is coated. Seal the bags, mark the contents and freeze.

When you want to make it just take the bag out and thaw in the refrigerator over night.

This not only allows the chicken to thaw but it will continue to marinate creating a super tender piece of chicken. Once thawed follow the directions for cooking on the grill or in the oven.

MEAL PREP:

Bake up some extra pieces of chicken and use them to create some meal prep meals. You can either package up the cooked chicken in your favorite meal storage containers or use pieces of chicken to create a delicious salad.

Cook extra chicken and slice it into strips.

You can create your own Keto Lemon Herb Chicken Salad by packing your favorite food storage containers with salad greens. Add the sliced chicken, vegetables of your choice, some olives, a bit of feta cheese and add in a small container of your favorite oil and vinegar dressing, Italian or Greek dressing or a balsamic vinegar dressing. A few slices of avocado or bacon will increase the fat for those who follow a keto diet and need to meet their fat grams for the day.

Diced this chicken up coarsely, add a bit of mayo and some extra pesto to create a delicious chopped chicken salad.
