Keto Simple Syrup Recipe (Sugar Free, Low-Carb)

This Keto simple syrup recipe can be used to sweeten all of your keto drinks, low carb cocktails as well as your other favorite drinks. In just 5 minutes you can make this zero carb syrup to use as a liquid sweetener.

What is simple syrup?

Simple syrup is a sugar solution made with just water and a sweetener. It’s used to add a touch of sweetness to drinks and it can even be used in cooking and baking.

Usually, for those not following a low carb or keto diet, traditional simple syrup would be made with regular sugar (white granulated sugar, table sugar, cane sugar, etc). This makes a syrup that’s high in carbs which can cause your blood sugar levels to go up when used.

Swapping out the high carb sugar for a sweetener with zero calorie will keep this syrup keto friendly.

In just a few minutes you can make a batch of this sugar-free syrup and store it in the refrigerator for a month. Keep it on hand to sweetener your favorite cocktails as well as non alcoholic drinks such as a glass of iced tea, lemonade or even hot or iced coffee.

Before we get to the recipe let’s talk sweeteners.

Everyone has their favorite no calorie sweetener. Personally, I’m not a big fan of the cooling effects you get from some types of sugar alcohol. While you can use any type of keto or no calorie sweetener to make this syrup I prefer to pass on those containing erythritol.

What type of sweeteners can be used to make this keto simple syrup?

You can use any type of low carb or keto sweetener. My favorites to use include Allulose and Splenda. You can also use erythritol based sweeteners such as Swerve and Monkfruit (a blend of erythritol and Monkfruit) as well as powdered or liquid Stevia.

While they all will work some may leave the syrup cloudy or make take a bit longer to blend into the water. If you notice any of the sweetener settling out once it has been sitting in the refrigerator just give it a good shake to mix it back in before using.

Ingredients to make Keto Simple Syrup

This recipe takes two simple ingredients:

  • Water – you’ll use 1 cup of water. If you are doubling or tripling the recipe or even wish to cut the recipe in half simple use equal parts water and sweetener.

How to make Keto Simple Syrup:

Place the water and sweetener in a sauce pan over a medium heat.

Bring the water to a boil. Reduce the heat and allow the water mixture to simmer for 4 to 5 minutes, stirring frequently until the sugar dissolves.

Allow the mixture to cool before using in drinks or storing in the refrigerator.

How to store Keto Simple Syrup:

Store this syrup in an airtight container in the refrigerator for up to a month. The syrup has a long shelf life when stored in the refrigerator. I like to keep mine in a mason jar or canning jar.

Once you’ve made this homemade sugar-free simple syrup it can be used to sweeten just about any recipe that a regular simple syrup would be used. I like using this in:

Why Is My Simple Syrup Forming Crystals?

Sometimes the syrup may form crystals if the water isn’t hot enough to dissolve your sweetener all the way. While you can mix the sweetener into boiling water I prefer to heat the water on the stove to get it hot enough to dissolve everything.

If you use an erythritol based sweetener you may also notice that crystals form over time while the simple syrup is sitting. The crystals won’t affect the taste of the syrup. You can get them to dissolve back in by heating the syrup up again and allowing it to slowly cool down.

How many carbs are in this Keto Simple Syrup?

Since this syrup is made with keto friendly sweeteners it will have zero net carbs. That’s because the sweeteners such as Allulose, Monkfruit, Swerve or any sweetener containing sugar alcohols do not affect the blood sugar levels. This makes them low on the glycemic index (a rating system that shows how quickly a food affects your blood sugar) and a great replacement for pure sugar (white sugar).

For those sweeteners or sugar substitutes made with sugar alcohols you will see carbohydrates listed on the nutritional label (see the label shown below). However, when you look at the breakdown of the types of carbohydrates you can see that it all comes from sugar alcohols which gives the sweetener zero net carbs (total carbs minus sugar alcohols equals net carbs).

Notes

Monk fruit is a sweetener made from a small fruit grown in Southeast Asia. It’s 150-200 times sweeter than sugar. Monk fruit sweeteners contains no calories. Some Monk fruit sweeteners are blended with Erythritol. These will contain sugar alcohols. While this type of sweetener also contains no calories you’ll want to keep in mind that there are sugar alcohols in it. Some people are sensitive to sugar alcohols and consuming too much can cause digestive issues. If you use a Monk fruit blend that contains erythritol then this recipe will have about 4 grams of sugar alcohols per tablespoon.
