Street Styled Greek Cauliflower
Forget serving up bland, steamed cauliflower. Roasting gives fresh cauliflower an amazing flavor! The cauliflower florets are roasted in the oven until they are golden brown with a bit of charring on the edges. This gives the cauliflower a mild, nutty flavor that will make you never want to return to steamed or, dare I even say it, boiled (yuk!) cauliflower again.
The roasted florets are topped with a Mexican Street Corn inspired sauce followed by a sprinkle of crumbled feta and finely cut fresh herbs.
The recipe is so simple that you’ll want to make it again and again. The flavor pairs well with just about any type of Mediterranean dish as well as many others. It’s one of our favorite low carb recipes and a delicious comfort food. Check out the serving suggestions below.
Ingredients for Roasted Greek Cauliflower:
- Cauliflower – you’ll need a whole head of cauliflower. You can also use pre-cut fresh cauliflower florets. You’ll want to use about 2 pounds of cut florets.
- Olive Oil – use Extra Virgin Olive Oil or swap it out for your favorite light flavored oil.
- Greek Style Yogurt – use unflavored yogurt for this recipe. I like the Greek style yogurt as it has a thicker texture which is perfect because you will be blending in other ingredients.
- Mayonnaise – use mayonnaise and NOT Miracle Whip / Mayo Salad Dressing. This has vinegar in it and this recipe is using lemon juice to add a tangy flavor to the sauce.
- Lemon Juice – use bottled or fresh lemon juice for this recipe. You can also remove the lemon zest before squeezing a fresh lemon and sprinkle it over the finished cauliflower if desired.
- Garlic Cloves – use finely minced fresh garlic
- Feta Cheese – use your favorite brand of crumbled feta cheese or use a fork to break up cubed feta so it is in small pieces.
- Dried Herbs and Spices – these include salt, black pepper, garlic powder and oregano.
- Fresh Herbs – you’ll want to use fresh dill and fresh mint. You can also add fresh parsley if desired.
How to make Greek Cauliflower:
This recipe is so easy to make. Roast the seasoning cauliflower. Drizzle the yogurt sauce over the top. That’s it.
Prep the cauliflower by breaking up the whole cauliflower and cutting off the florets. Wash the florets off and pat dry.
Start by preheating the oven to 425 degrees.
TIP: don’t forget to save the cauliflower stems to use to make homemade broth. Simply stick them in a freezer bag and keep them in the freezer until you are ready to make homemade broth.
Place the cauliflower florets in a large mixing bowl. Drizzle with the olive oil and sprinkle the garlic powder, salt and black pepper over the cauliflower.
Spread the cauliflower in a single layer on baking sheet or a large baking dish. You can line the baking sheet with parchment paper if desired to make clean up easy. Bake for 25-30 minutes, mixing once halfway through cooking, until the cauliflower is softened and has become golden brown. Remove from oven and cool for 5 minutes.
Making the sauce:
Combine Greek yogurt, mayonnaise, lemon juice, minced fresh garlic, dried dill, oregano, salt, black pepper and in a small bowl and stir to combine.
After cauliflower is cool, drizzle with the yogurt sauce and top with crumbled feta and chopped fresh herbs before serving.
How to store this Greek Cauliflower:
For the best flavor store any leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat: if the cauliflower is coated with yogurt sauce then it will be better to reheat the leftovers in the microwave.
If the cauliflower is not drizzled with the yogurt sauce you can reheat it in the oven (325 degrees for 10 minutes) or you can also reheat the florets in the air fryer (325 degrees for 4 to 5 minutes).
Recipe Swaps:
Greek Seasoning Mix – Greek seasoning mix isn’t often found in grocery stores. But you can quickly mix up a batch at home. Try using this homemade Greek Seasoning mix in place of the dill. It’s very easy to make and adds delicious Greek style flavored to your dish.
Yogurt Sauce – don’t want to make your own yogurt sauce? You can swap this out for a store bought Tzatzki sauce.
Feta Cheese – Don’t have feta or don’t care for its flavor? You can swap it out for cotija or queso fresco cheese. This is a mild cheese that can be easily crumbled that works well with the other flavors in this recipe.
Fresh Herbs – using fresh herbs to sprinkle on top of the finished cauliflower gives the best flavor. Dill and mint provides traditional Greek flavors to this recipe. You can swap out the fresh herbs for dried herbs or even freeze dried herbs. You’ll want to use 1 teaspoon of dried herb to replace 1 tablespoon of minced fresh herbs.
Red Onion – top your cauliflower with a bit of finely diced red onion which is often used in Greek dishes.
