Low Carb Hamburger Soup Recipe

Back in the day, when we attending wedding receptions and other functions at a local banquet facility called the Venus de Milo, you could always count on enjoying some of their delicious soup served with each meal. It was called Venus de Milo soup after the banquet hall. While made with a handful of simple ingredients it had a delicious flavor that everyone loved. Locals recreated it at home and my own family enjoyed it on a regular basis.

Made with browned ground beef, diced tomatoes, a bag of mixed frozen vegetables or a can of Veg-All, onion soup mix and orzo it made a hearty soup that was enjoyed with some crusty bread.

These days I pass on the bread and orzo in place of lower carb foods. The version my family now eats uses a bag of coleslaw mix in place of the orzo. It makes the soup more filling. I sometimes use the can of Veg-All but sometimes replace it with a can of string beans. It all depends upon my mood and what I have on hand. The carb count isn’t terribly different per bowl. I’ll include both versions as well as some freezer tips below.

This soup comes together quickly. There’s no cutting or chopping vegetables needed. You simply brown the ground beef, add all the other ingredients in and cook until they are softened. Enjoy with a bit of Parmesan cheese sprinkled on top. Make a bigger batch and freeze the extra in individual serving sizes.

This delicious soup can be made two ways.

First way is by using a can of Veg-All or, as the generic brand in the grocery store is called, mixed vegetables. In the original Venus di Milo soup the recipes called for a can of Veg-All which contained a mixture of celery, string beans, carrots, peas, potato cubes and lima beans. While not traditionally what one might think of as being keto a single can in the pot of soup still keeps the net carbs relatively low.

If you use the canned mixed vegetables you get the following stats:

  • If 6 servings there are 17 grams of carbs, 5 grams fiber and 12 grams net carbs.

If you use string beans you get the following stats:

  • If 6 servings then there are 359 calories, 22 grams fat and 12.6 net grams of carbs.

Ingredients

  • 1 1/2 pounds ground beef
  • 16 ounce package coleslaw mix
  • 15 ounce diced tomatoes
  • 15 ounce string beans or Veg All
  • 3 - 15 ounce beef broth
  • 1 package onion soup mix
  • 2 teaspoons Italian seasoning mix or 1 tsp basil and 1 tsp oregano

Instructions

  • In a large pot brown the beef over a medium heat. Once the beef is browned drain off the excess fat.
  • Add the soup mix, diced tomatoes, Veg-All (or string beans), coleslaw mix, spices and beef broth.
  • Bring to a boil, reduce heat and simmer for about 15 minutes or until the vegetables are soft.
  • Serve with a sprinkle of Parmesan cheese on top if desired.

 FREEZER TIPS:

This soup freezes very well especially when made with the string beans in place of the mixed vegetables. Depending upon how long it stays frozen the potatoes in the mixed vegetables can crumble apart when thawed. It does not change the taste. Only how the potatoes look. Because of this I don’t freeze it if using the vegetable mix.
