Easy Keto Cheeseburger Soup Recipe (Low Carb)

Love cheeseburgers but don’t love the carbs? This easy keto cheeseburger soup has all the flavors you love about cheeseburgers in a hearty soup.

You don’t even have to be following a low carb diet to enjoy this soup. It’s so good that it’s popular with everyone who tries it…..including your picky eater!

You can add your favorite toppings to this cheeseburger soup. Just think of what you enjoy adding to a regular cheeseburger…..onions, lettuce, pickles, tomatoes, bacon, etc. They all can be used as toppings. See below for tips and suggestions.

Ingredients for Keto Cheeseburger Soup:

Ground Beef – I used 80/20 ground beef for this recipe. While I drain off the excess fat after it has been cooked I find prefer to use this type so the meat stays flavorful in the soup.

Onion – use a medium to large onion for this.

Celery – 1 to 2 stalks should give you enough for a half a cup of sliced celery.

Garlic – 2 cloves adds flavor to this dish.

Oil – a small amount is used to sauté the onions, celery and garlic. Use your favorite type of oil such as olive, canola, vegetable or even coconut oil.

Beef Broth or Beef Stock – use your favorite brand.

Diced Tomatoes – I used canned petite diced tomatoes. You can also use fresh tomatoes instead of canned. You’ll want to use 2 to 3 tomatoes (about 1 1/2 cups of fresh, diced tomatoes).

Ketchup – choose a sugar-free ketchup or a low sugar ketchup.

Mustard – I use yellow mustard.

Worcestershire Sauce – adds flavor to the broth.

Pickles – I prefer to use sugar-free dill pickles. You can use your favorite type.

Cream Cheese – use full fat for the best flavor.

Shredded Sharp Cheddar Cheese – you can swap this out for your favorite type of cheese.

How To Make Keto Cheeseburger Soup:

On the stove top, in a large stock pot add the diced onion, celery and garlic along with 1 tablespoon of oil. Sauté the vegetables over a medium heat until just beginning to soften, about 3 to 4 minutes.

Add in the ground beef and brown. Use a spoon or spatula to break up the meat while browning. Drain the excess fat from the browned beef.

Add in the diced tomatoes, pickles, Worcestershire sauce, ketchup and mustard. Stir well.

Add in the beef broth, stir and bring to a simmer over a medium heat for 5 minutes.

Add in the cream cheese and cheddar cheese and stir until melted and the cheeses mix smoothly into the broth.

Serve the soup. Top with your favorite toppings.

Keto Cheeseburger Soup Variations and Toppings:

Ground meat – you can easily swap out the ground beef for other ground meat including turkey, chicken and pork.

Shredded lettuce: Yes. Lettuce as a topping for soup. It adds a bit of crunch and gives the soup a more traditional burger flavor.

Cheese – use your favorite cheese in this soup. I used cheddar cheese because this is what I usually put on cheeseburgers. But we also use other types of cheese on our burgers and they taste just as delicious in this soup. We’ve tried this with smoked gouda, gruyere and a variety of other cheeses such as pepperjack, Monterey jack, colby cheese and more.

Cooked Bacon – do you put bacon on your cheeseburgers? Then add in some diced crispy bacon to this cheeseburger soup. It tastes delicious! After all bacon makes just about everything taste delicious and can add to the taste of a cheeseburger in this soup.

Diced pickles, onions or green onion – don’t be afraid to top your soup with a few more diced pickles and onions.

Peppers and mushrooms – if you love adding these to your burger then they will taste just as good in this soup. Add them in with the onions in the beginning and sauté them with the other vegetables.

How to store keto cheeseburger soup:

If you have leftovers store them in an airtight container in the refrigerator for 3 to 5 days. As the soup sits it can thicken. If you would like to thin it out a little try adding in a little more beef broth or even some heavy cream.

Can you freeze keto cheeseburger soup?

Yes it will freeze well. Place the soup in freezer safe containers and freeze up to 3 months. This soup contains cheese which can appear grainy when frozen. But don’t worry. Once the soup is reheated and you stir it will the cheese will mix back into the soup.

One of my favorite ways to keep leftovers is to freeze individual servings to make easy meal prep meals. Pull them out of the freezer when you need a quick lunch or supper on busy weeknights. I have even made a double batch so I can meal prep easy meals to pack for lunch at work.

Can I leave the pickles out of this cheeseburger soup?

If you don’t like pickles you can easily leave them out of this soup recipe. The soup will still taste great! You can easily offer diced pickles on the side to be added as a topping.

What to serve with keto cheeseburger soup:

This soup is thick and filling. It makes a delicious meal when served alone. But, sometimes you want to have something with your soup. Here’s some ideas:

Keto Cheddar Biscuits – these cheesy biscuits are the perfect side dish for this soup.

Grilled Cheese Sandwich – use keto friendly bread if on the keto diet or traditional flour based bread if you aren’t.

Green Salad – hearty soup sometimes needs a side dish that’s a little lighter. I love having a spinach and bacon salad when I have this soup.

Feeding family members that eat higher carb foods? Then try serving these as sides:

Can this be made in a slow cooker?

Yes it can! I would start by browning the meat and draining off the excess fat. Once that is done all the other ingredients can be added to the slow cooker. Cook on low heat for 2 to 3 hours to allow the vegetables to soften and the flavors to blend. Stir well to mix in the cheese and serve.
