Low Carb Hamburger Soup Recipe

You can replace the Veg-All with a can of string beans for an equally delicious and slightly lower in carbs.

Ingredients

  • 1 1/2 pounds ground beef
  • 16 ounce package coleslaw mix
  • 15 ounce diced tomatoes
  • 15 ounce string beans or Veg All
  • 3 - 15 ounce beef broth
  • 1 package onion soup mix
  • 2 teaspoons Italian seasoning mix or 1 tsp basil and 1 tsp oregano

Instructions

  • In a large pot brown the beef over a medium heat. Once the beef is browned drain off the excess fat.
  • Add the soup mix, diced tomatoes, Veg-All (or string beans), coleslaw mix, spices and beef broth.
  • Bring to a boil, reduce heat and simmer for about 15 minutes or until the vegetables are soft.
  • Serve with a sprinkle of Parmesan cheese on top if desired.
