Little Smokies Pigs In A Blanket Recipe
Traditional pigs in a blanket are made with canned crescent roll dough. This high carb crescent dough can easily be swapped out with keto friendly Fathead dough which helps to lower the carb count.
Each individual section of canned crescent roll contains 12 net carbs per section. The same sized section of FatHead dough contains 2.5 net grams of carbs!
Fathead dough can be used to make full sized pigs in a blanket (2.5 net grams of carbs each) or the same sized piece of dough can wrap 3 to 4 Little Smokies or mini hot dogs (also 2.5 net grams each).
The Little Smokies have some carbs in them as well so don’t forget to include those in.
Currently there are a variety of flavors available from smoked beef mini sausages to those containing cheddar, bacon and even jalapeno. Swap out the traditional smoked beef for one of the other varieties to switch up the flavor.
Ingredients for Low Carb Pigs In A Blanket:
- Mozzarella cheese – this mild flavored cheese is the main ingredient in this fathead dough. Its neutral flavor allows this dough to be used to make savory as well as sweet recipes. You will want to use low-moisture, part-skim mozzarella. Buy it in blocks and shred it yourself or use pre-shredded cheese for convenience.
Do not use fresh mozzarella (the kind sold in a ball or log shape). This type of cheese contains too much moisture and won’t create a dough that bakes up with the right texture.
- Cream cheese – helps to give this recipe a soft, dough like texture.
- Almond flour – provides structure to this dough. You can use blanched almond flour or almond meal. The almond meal is a bit coarser in texture than almond flour. They both can be used to make fathead dough.
- Baking powder – allows the dough to rise a little when baked.
- Egg – wets the dough and helps the dough to rise when baked.
- Little Smokies or similar mini sausage or hot dog – use these mini sausages or your favorite mini hot dog.
How to make Little Smokies Pigs In A Blanket:
Start this recipe by making the keto dough that will be used to wrap the sausages/hot dogs. This keto friendly dough is easy to make and can be whipped up in a few minutes. Check out the original recipe for the Fathead dough for information about storing the finished dough in the refrigerator or freezer.
1. Place the mozzarella cheese and the cream cheese into a microwave safe bowl.
2. Microwave the cheese 30 seconds at a time, stirring after each 30 seconds until melted.
3. Mix in almond flour and baking powder.
Add the egg in to the mixture.
4. Mix until blended and then knead until soft.
5. Place the dough between two sheets of parchment paper and roll out to about 1/4 inch thick
6. Trim the edges of the dough to make a rectangle shaped piece of dough. You can press the trimmed off pieces back into the remaining dough.
7. Cut the dough into strips about 1 inch wide.
Place the mini sausage on the dough, roll until it is wrapped around it, cut and press the ends together.
7. Place on a baking sheet and bake in a 350 F oven for 12 to 15 minutes or until the dough is golden brown.
8. You can bake them as they are or brush the tops with a bit of melted butter and sprinkle on your favorite seasoning blend. Try using an Everything Bagel seasoning mix or some sesame seeds.
What sauce goes with pigs in a blanket?
You can use traditional sauces served with hot dogs such as ketchup and mustard. You can use something a little different such as a keto friendly honey mustard sauce. Try dipping them in chili sauce or even this easy to make keto BBQ sauce.
