How To Make Fathead Dough

Fathead Dough is an amazing mozzarella cheese dough is said to have been made by Tom Naughton’s nephew. Tom Naughton is the creator of the Fat Head Movie – a documentary about cholesterol/heart disease.

Tom points out that the Fathead dough is a version of another mozzarella based dough found at Cooky’s Creation website which was originally published back in 2012. Though the difference in recipes between the two sites are slight, this cheese dough has gained popularity after being posted on the Fat Head Movie website and now bares its name.

Looking around at websites you will find this dough being made with slight variations…..more or less mozzarella, various amounts of cream cheese, some with added baking powder, some with coconut flour in place of the almond flour and others with different cheese blends.

They all basically function the same way. The cheese provides structure to form the “bread”. Mozzarella is used because it has a very mild flavor and allows the other flavors in each recipe to come through. The same technique is used for each recipe. 

This dough is super easy to make, made with simple ingredients, doesn’t require a food processor to mix and only takes a few minutes to come together. Once you have the finished dough it can be used to create a wide variety of recipes from bread and crust to pizza and desserts. The possibilities are endless.

Ingredients for Fathead Dough:

  • Mozzarella cheese – this mild flavored cheese is the main ingredient in this fathead dough. Its neutral flavor allows this dough to be used to make savory as well as sweet recipes. You will want to use low-moisture, part-skim mozzarella. Buy it in blocks and shred it yourself or use pre-shredded cheese for convenience.

Do not use fresh mozzarella (the kind sold in a ball or log shape). This type of cheese contains too much moisture and won’t create a dough that bakes up with the right texture.

  • Cream cheese – helps to give this recipe a soft, dough like texture.
  • Almond flour – provides structure to this dough. You can use blanched almond flour or almond meal. The almond meal is a bit coarser in texture than almond flour. They both can be used to make fathead dough.
  • Baking powder – allows the dough to rise a little when baked.
  • Eggs – eggs are used to wet the dough and it helps the dough to rise when baked.

How to make Fathead Dough:

Place the shredded mozzarella cheese and the cream cheese into a microwave safe bowl.

Microwave the cheese 30 seconds at a time, stirring after each 30 seconds until melted. Stir well to combine.

Mix in almond flour and baking powder.

Add in the egg.

Mix until blended then knead until soft. The dough is ready to be used in a recipe. Try one of the recipes below.

Can you use cheddar or another cheese in place of mozzarella cheese?

Yes. You can use other types of shredded cheese in place of the mozzarella.

Depending upon which type of cheese you choose to use it can add to the flavor of the finished product. If you use a stronger tasting cheese, as mozzarella is light and neutral tasting, the taste of the cheese can add to the final flavor.

Also be aware that some types of cheeses are saltier, such as Parmesan cheese, and this will make the dough saltier. Be aware of this if you swap out the mozzarella for something else and are going to use the final dough for something such as a fathead pizza crust. If you use a saltier cheese you may want to stay away from salty toppings when making your keto pizza

Try using cheddar cheese in dough that is used for pizza crust and sandwich or dinner rolls. Swap out some of the mozzarella for smoked Gouda, Swiss or even Gruyere. They all taste delicious in this dough.

What do I do if my dough is sticky?

Sticky dough can be caused by the amount of moisture in your brand of cheese. This is an easy enough problem to solve. If you find your dough is sticky try kneading in a tablespoon of additional almond flour, knead it to mix the flour in and then assess the texture. If it’s still sticky continue to add almond flour one tablespoon at a time, mixing after each addition, until it’s no longer sticky.

Usually adding in another 1 to 3 tablespoons will be enough to change the texture. This should make the dough will be less sticky and easier to use in other recipes.

How many carbs does FatHead dough have?

This recipe can be split into 4 servings. Each serving has 4 grams of net carbs.

Net carbs are the carbohydrates that will affect your blood sugar levels. This is calculated by subtracting the grams of fiber from the total grams of carbs. Fiber, while being a type of carbohydrate, does not affect your blood sugar levels. So it is subtracted from that amount to give you the number of carbs that will affect your blood sugar level.

Does FatHead Dough Taste Good?

FatHead dough has a mild flavor. It can be used for both sweet and savory recipes. You can add herbs and other seasonings for added flavor to the dough based on the type of recipe it is being used in.

You can roll it thicker for recipes that have a more bread like texture, such as cheesy bread or cinnamon rolls, or roll it thinner for recipes that you want to have crisp such as a thin crust pizza.

How long will Fathead dough last?

Once made, Fathead dough can be stored in the refrigerator for 7 to 10 days. Wrap the ball of dough in plastic wrap to help maintain the texture and prevent it from picking up other tastes while stores in the refrigerator.  

Can the dough be frozen?

Yes you can freeze fathead dough. Wrap the finished dough in plastic wrap and place in a sealed freezer bag. Once ready to use take it out of the freezer and allow it to come to room temperature. After it has thawed it can then be rolled out and used in recipes.

Can the dough be used to make keto pizza crust?

Yes fat head dough makes great low carb pizza crust! Forget using cauliflower pizza crust and try using this keto dough instead.

This is actually one of my favorite uses for this dough. It’s a perfect use for those on a keto or low carb diet.

You can easily press out the dough with your fingers or place the dough between two pieces of parchment paper and use a rolling pin to get the dough to your desired thickness. Add sauce and your favorite toppings and top with some shredded cheese. Cook this keto pizza dough on a baking sheet or a pizza stone until it is golden brown. Both methods will make the dough nice and crisp.
