Ingredients to make Guacamole with no tomatoes:
- Ripe Avocados – you’ll want to use at least 4 avocados to make this recipe
- Shallots – use 1 finely diced shallot. Don’t have access to shallots? Then you can swap this out for a quarter to a half of a very small white onion or sweet Vidalia onion. You can also use red onion but the flavor is stronger than other types of onion.
- Jalapeno – use a fresh jalapeno, deseeded and finely diced. Don’t have a jalapeno then you can swap it out for hot sauce. Add in a few dashes to meet your level of heat.
- Cilantro – I prefer to use fresh cilantro for my guac. Usually I have some in the freezer. Check out the tips section for more information on how you can prep your cilantro for those times you need small amounts.
- Lime – you’ll need fresh lime juice from one lime.
- Salt and Black Pepper – use kosher salt, sea salt or your favorite type of salt as well as some black pepper are needed.
How to store leftover Guacamole:
I like to make a double batch of this classic guacamole recipe so I can have extra to enjoy throughout the week. But guacamole will slowly go brown the longer it’s exposed to air. To help keep this delicious dip looking its best try some of these tips:
- The best way to store leftover guacamole in an airtight container for 2-3 days to lock out as much air as possible
- Add a squeeze of lemon juice or lime juice to the top of the guac and then press a piece of plastic wrap down on the surface of the guacamole so it is touching it

Recipe Tips:
- This recipe is based on average size avocados. If your avocados are small feel free to use additional avocados
- Don’t over mix the guacamole. Leave some chunks of avocado for texture.
- For the best flavor, serve your guacamole immediately, or store it in an airtight container with a piece of plastic wrap pressed directly onto the surface to prevent discoloration.
- For extra zing, add the seeds from the jalapeno.
Freeze your leftover cilantro – this recipe using a small amount of cilantro. Since this is usually purchased in a big bunch you can easily freeze the leftovers to use in other recipes. Wash and dry the cilantro. Pull the leaves off the stems and coarsely chop. Place in a freezer bag and mix in 2 to 3 tablespoons of extra-virgin olive oil or your favorite light flavored oil. Seal the bag, removing as much air as possible. Freeze.
When you need a bit of cilantro, pull out the freezing bag and remove some of the cilantro. It will thaw out quickly and you can add the cilantro into your recipe.
