Easy Breakfast Grazing Board

This oval platter was found at my local Christmas Tree shop. They had this light weight plastic platter in several different colors. It measures 19 1/2 inches long and 13 3/4 inches wide. I held enough food to easily feed 6 to 8 people (depending upon their appetites).

You can use a platter or even a large cutting board.

Don’t have either? Don’t worry. You won’t have to go out and spend more money to purchase something special. Until I found several low cost platters and boards to use I just used a large cookie sheet or baking pan. It will be covered in food so you don’t need to have something special to create your own grazing board.

Ingredients to make this Breakfast Grazing Board:

Here’s what you’ll need to make this breakfast charcuterie board. I’ve included average amounts for certain items such as the waffles, pancakes and sausages. If you feel you need more to serve your family and guests then purchase additional amounts.

Waffles – I used Eggo blueberry waffles. You can use your favorite store bought or homemade waffles. On the keto diet? Try using these delicious Blueberry Cinnamon Chaffles in place of waffles. There are 10 waffles in a box of Eggo waffles.

Pancake – I used Eggo buttermilk pancakes. You can use your favorite store bought or homemade pancakes. There are 12 pancakes in the Eggo package.

Sausage – I used a store brand sausage links as well as patties. You can easily swap this out for bacon, Canadian sausage, vegetarian/vegan sausage or whatever favorite breakfast meat you enjoy. You can also try making your own homemade sausage with this breakfast sausage recipe. There were 10 sausage links and 8 sausage patties in the packages that I purchased.

Strawberries – wash the fresh strawberries before adding to the board. I left the tops on but you can easily cut the tops off before placing on the board. You can also swap out strawberries for raspberries.

Blueberries – use fresh blueberries or even blackberries if desired.

Cream cheese stuffed crescent rolls – I made these easy to make blueberry cream cheese stuffed crescent rolls and strawberry cream cheese stuffed crescent rolls to include on this grazing board. If you don’t make to make these delicious crescent rolls you can easily use store bought crescent rolls and then include a selection of jams or jelly to be used to top the crescent rolls. The stuffed crescent roll recipe made 8 of each flavor.

How to make this breakfast grazing board:

How you set your breakfast board up will depend upon the size and shape.

Prepare your sausage, waffles and pancakes according to directions. See the FAQ’s below for some tips on keeping everything warm until you are ready to assemble your board.

Start by placing the crescent rolls in the center of the board.

Add stacks of waffles and pancakes on your board. For the best visual effect you will want to leave a bit of the board showing around the edges. Don’t overfill the board so the waffles/pancakes overlap the edge of the board.

Tuck the sausage around the waffles and pancakes.

Fill in the gaps on the board with fresh strawberries and blueberries.

How to store breakfast board leftovers:

Store any of the left overs in a Ziplock bag or a covered container in the refrigerator for 3 to 5 days.

I don’t have a breakfast board/platter. What can I use?

No board or platter available? No worries. You can easily use a baking sheet (or two) in place of a platter. If your baking sheet has an raised edge that will help keep everything on the board. Is your baking sheet discolored from use? You can line the baking sheet with aluminum foil if desired to hide any discoloration.

How do I keep everything warm before serving?

Once you have cooked the waffles, pancakes and sausages you can keep them warm until you are ready to assemble your board by placing them on a baking sheet in a single layer in the oven set to 200F (90C).

How many people does this breakfast board feed?

It all depends upon their appetite. This breakfast board can easily feed 6 to 8 people who have a good appetite (2 pancakes, 2 waffles, 2-3 crescent rolls, 2 sausages, several strawberries and some blueberries). You can easily increase the number of items on the board or add some additional breakfast items (eggs, bagels, toast, muffins, hash browns, yogurt with granola topping, other fruits, etc) on the side.

What do you serve with this?

This breakfast grazing board also makes a delicious brunch board. Start with adding your favorite pancake/waffle syrup on the side.

Don’t forget to include drinks such as orange juice, hot chocolate, coffee, tea or whatever beverages you enjoy at breakfast time. Make it a special occasion by serving mimosas.

Use the leftover cream cheese mixture from making the stuffed crescent rolls as an additional topping for the waffles and pancakes. It tastes like cheesecake and tastes so good when spread on the waffles and pancakes.

Can I make this if I don’t want to make the blueberry or strawberry crescent rolls?

Of course, you can! Not everyone has the time or enjoys baking so you can easily swap out the crescent rolls on the board with something different. Check your local store for premade plain crescent rolls. Add a small container of jam or jelly on the side. Don’t’ want to use crescent rolls? Try using Cinnamon rolls, biscuits or even mini muffins instead.
