There’s nothing quite like the rich, nutty flavor of a pistachio latte to warm you up on a chilly day. While the Starbucks Pistachio Latte has become a seasonal favorite, you don’t have to wait for its return or shell out extra cash for your coffee fix. Making your own pistachio latte at home is easier than you think, and you can customize it to suit your taste and dietary needs.

Why Make It at Home?
Not only does making your own pistachio latte save you money, but it also allows you to control the ingredients. Whether you’re avoiding added sugar, dairy, or just want to tweak the sweetness level, this DIY version is fully customizable. Plus, it’s a fun way to bring the Starbucks experience to your kitchen.
Starbucks offers this seasonal pistachio latte hot, as a cold brew and as an iced latte. The store bought drink features a salted brown butter topping. The brown butter topping is made with butter and sugar. To make this drink super easy to make I swap it out for some finely chopped pistachios to boost the pistachio flavor.
If you want to create the brown butter topping I’ve included a recipe for that as well as making homemade pistachio syrup.
Ingredients for a Homemade Iced Pistachio Latte
For this recipe you’ll need the following ingredients:
Ice Cubes – You’ll need about 3/4 to 1 cup of ice cubes for this recipe.
Cold Espresso – Make your espresso using your favorite method. You’ll need about 1-2 shots of espresso or ½ cup of strong brewed coffee.
Milk – Use your favorite type of cold milk for this recipe such as whole milk. Or use your favorite type of plant-based milk such as oat milk, almond milk, coconut milk, soy milk, etc.
Pistachio syrup – you can make your own homemade pistachio syrup or use a store bought pistachio syrup.
Powdered Coffee Creamer – using a bit of powdered coffee creamer helps to make the drink have a delicious, creamy texture.
Optional Toppings – you can top your iced latte with whipped cream and finely chopped pistachios.
How to make this Iced Pistachio Latte:
Pour the espresso shot or strong coffee, milk, pistachio syrup and powdered coffee creamer into a blender.
Pulse several times to combine.
Add the ice to the blender. Blend on high speed for two minutes or until the mixture is creamy and foamy.
Pour the frothy into the glass all the way to the top, garnish with whipped cream and chopped pistachios if desired. Serve right away.
Glasses can be chilled if desired. Pour the Frappuccino into the glass all the way to the top, garnish with whipped cream and pistachio flakes. Serve right away.
Want a hot Pistachio Latte? Here’s how to make it:
Prepare your espresso: Brew your espresso or strong coffee and pour it into your favorite mug.
Heat the milk: In a small saucepan heat your milk until it’s warm but not boiling. Want to have creamy foam? Then use or using a milk frother to heat and whip the milk until it’s a creamy foam.
Mix the base: Stir the pistachio syrup into the hot espresso.
Combine and froth: Pour the heated milk into the espresso mixture. If you’ve frothed the milk, spoon the foam on top.
Add the finishing touches: Top with whipped cream and a sprinkle of crushed pistachios for a delicious drink worthy of being served up at your local coffee shop.
How to Make Pistachio Syrup:
Nutty pistachio syrup can be found in your local grocery store or online. Look for brands such as Torani, Monin, Jordan’s Skinny Syrups and more. There is also a pistachio coffee creamer that I found in my local store. International Delights makes a Pistachio Latte creamer that makes a good replacement for the pistachio syrup and powdered coffee creamer. Give it a try!
If you can’t find pistachio syrup at your local store or would prefer to make your own here’s a simple recipe to create your own DIY pistachio syrup:
Ingredients:
1 cup sugar
1 cup water
¼ cup shelled pistachios, finely chopped
½ teaspoon vanilla extract
Directions:
In a small saucepan, combine sugar, water, and chopped pistachios. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
Reduce the heat and let the mixture simmer for about 5 minutes.
Remove from heat, stir in the vanilla extract, and let the syrup cool.
Strain the mixture through a fine mesh sieve or cheesecloth to remove the pistachio bits. Store the syrup in a sealed jar in the refrigerator for up to two weeks.

For the browned butter cookie topping you’ll need:
2 tablespoons salted butter
¼ cup finely crushed butter cookies – use butter cookies, not sugar cookies for this topping. You can also use biscoff cookies if you want a hint of cinnamon in your latte.
Directions:
In a small saucepan, melt 2 tablespoons salted butter over medium-low heat until the butter melts and begins to simmer. Keep stirring the melted butter. You’ll notice that the butter begins to foam/bubble. The water is evaporating from the melted butter and the milk solids are falling out of the liquid.
Keep stirring the melted butter. You will begin to notice that the mixture is starting to become brown. Once it has become browned, turn off the heat and stir in the crushed cookies.
Sprinkle a small amount over the top of each latte. Store the remaining browned butter mixture in an airtight container in the refrigerator.
Ingredient Swaps and Tips
Pistachio syrup – you can swap out the pistachio syrup for store bought pistachio cream or pistachio butter. These are thick, butter like products made with a combination of pureed pistachios, milk, butter and sugar. It’s used as a dessert filled or spread. You can use it in place of the pistachio syrup. I prefer to go with the syrup as the pistachio cream or butter costs much more.
Milk Options: For a creamier latte, use whole milk. If you prefer a lower-calorie option, skim milk, almond milk or other plant based milks work well.
Sugar-Free Version: Look for a sugar-free pistachio syrup if you’re buying it pre-made.
Espresso Alternatives: No espresso machine? Brew a strong cup of coffee or use instant espresso powder.
Boost the Flavor: Add a dash of cinnamon or nutmeg to the syrup for a warm, spiced twist. Mix in a teaspoon of vanilla or almond extract for an extra layer of flavor.
