This air fryer eggplant pizza recipe has all of your favorite pizza flavors but without the heavy carb load of a traditional pizza. Give this one a try if you are on a keto diet. And, if you aren’t, you will still love the flavors in this recipe!
Eggplant seems to be the forgotten low carb and keto friendly vegetable that often gets overlooked. Eggplant, which you may also see it called aubergine, is a rather flavor neutral vegetable (it doesn’t have a strong flavor like cauliflower does) and it can easily take on the different tastes of the dish it is cooked in.
One cup of Eggplant cubes (about 3 ounces by weight) has the following nutrition:
- Calories: 20.5
- Fat: 0.1g
- Carbohydrates: 4.8g
- Fiber: 2.4g
- Protein: 0.8g
- Net carbs: 2.4g
It’s also high in manganese (contains about 10% of your daily requirements) and it a great addition to those following a keto diet. Manganese is a trace mineral that is involved in producing enzymes that metabolize fats and proteins. It also supports the immune system, helps with healthy bone growth and plays a role in regulating blood sugar levels. As many people try a low carb or keto diet to help lower their blood sugar levels then including foods high in manganese can provide some benefits to them.
Air Fryer Eggplant Pizza Recipe
Ingredients:
1 Medium eggplant, washed and sliced about 1/3 inch lengthwise
1/2 cup marinara sauce
1 cup shredded mozzarella
1/2 yellow pepper, diced
18 pieces of Pepperoni
1/2 teaspoon Garlic powder
1/4 teaspoon Red pepper flakes
A medium eggplant will make about 6 good size slices.
Directions for the Air Fryer:
Spoon marinara sauce over eggplant slices.
Divide the shredded cheese between the slices. Do the same with the diced yellow peppers and pepperoni pieces.
Sprinkle the red pepper flakes over the top of the slices.
Place the slices of the eggplant on the tray or rack of your air fryer.
Air Fry for 8-10 minutes at 385 degrees.

Eggplant Pizza Oven Directions:
Preheat oven to 400 degrees.
Place eggplant slices on a baking sheet.
Bake the eggplant at 400 degrees for about 15 minutes.
Remove from the oven and sprinkle the garlic powder over the baked eggplant slices
Top with marinara sauce. Divide the shredded cheese between the slices. Do the same with the diced yellow peppers and pepperoni slices.
Sprinkle the red pepper flakes over the top of the slices.
Bake for another 5 minutes or until the cheese is melted.
Do you need to peel eggplant before cooking?
No. The skin is edible and the eggplant does not have to be peeled before using it.
Always wash the eggplant before cooking it to remove any debris from the skin. Use store bought fruit and vegetable wash or try this homemade vegetable wash recipe.

- Air Fryer
Ingredients
- 1 medium eggplant sliced 1/3 inch thick lengthwise
- 1/2 cup marinara sauce
- 1 cup mozzarella cheese shredded
- 1/2 Yellow Bell Pepper diced
- 18 pieces pepperoni
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon red pepper flakes
Instructions
- Spoon marinara sauce over eggplant slices.
- Add cheese, yellow pepper, and pepperoni.
- Sprinkle with garlic powder and red pepper flakes.
- Place on the Air Fryer tray or basket.
- Air Fry for 8-10 minutes at 385 degrees.
- Serve hot and enjoy.
