Ingredients

  • 1 medium eggplant sliced 1/3 inch thick lengthwise
  • 1/2 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 1/2 Yellow Bell Pepper diced
  • 18 pieces pepperoni
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon red pepper flakes

Instructions

  • Spoon marinara sauce over eggplant slices.
  • Add cheese, yellow pepper, and pepperoni.
  • Sprinkle with garlic powder and red pepper flakes.
  • Place on the Air Fryer tray or basket.
  • Air Fry for 8-10 minutes at 385 degrees.
  • Serve hot and enjoy.

Notes

Notes: Use a reduced sugar or no sugar added marinara sauce to cut additional carbs. Check the nutrition label of the brand you are using for information on the total carbs in that sauce. 
Make your own no sugar added sauce with this low carb spaghetti sauce recipe. Leave out the sausage to make a plain sauce.
