Easy Slow Cooker Pot Roast
This recipe is so easy to make but tastes like you’ve spent the day in the kitchen cooking. We love serving it over mashed potatoes with a side of vegetables.

The one ingredient that adds big flavor to this dish is the dry onion soup mix. I’ve tried various brands of onion soup mix from brand names, such as Lipton Onion Soup mix, to the generic store brands. They all taste great in this recipe! Check out the recipe swaps section for some tips on using this ingredient.
Ingredients for this Slow Cooker Pot Roast Recipe
You only need a few ingredients to make this roast.
- Beef Broth – use your favorite brand of broth for this recipe. Adding a little beef broth adds a boost of flavor to the gravy.
- Cream of Mushroom Soup – you’ll need a can of Cream of Mushroom Soup. Use your favorite brand.
- Onion Soup Mix – this dry soup mix is what gives this delicious pot roast incredible flavor.
- Beef Roast – for this recipe you’ll want to use a 3 to 4 pound roast. You’ll want to choose a fairly lean cut of meat for this recipe. Some of the best beef cuts for slow cooking in a crockpot includes chuck roast, rump roast and bottom round.
How to make Slow Cooker Pot Roast
With a sharp knife, trim away any excess fat on the beef roast. Place it in the slow cooker, fat side facing up.
In a small bowl, combine the cream of mushroom soup and dry French onion soup mix. Stir in the beef broth.
Pour the cream of mushroom soup mixture over the top of the beef roast.
Place the lid on the crock and cook on high setting for 5-6 hours or on low setting for 6-8 hours. The beef should be fork tender and easy to pull apart.
Using two forks, pull the meat apart into shreds and stir into the gravy in the bottom of the slow cooker.
Serve the shredded beef and gravy over mashed potatoes with a side of your favorite vegetables.
How to store leftovers:
Store leftovers in an airtight container in the refrigerator up to 3 days.
Reheat in the microwave or on the stove top in a saucepan. You can add a bit of water to the saucepan if there isn’t much gravy left to reheat. Depending upon how much pot roast you are warming up you can add several tablespoons to about 1/4 cup of water to the pan. This will keep the beef from drying out and will create a bit more gravy.
Recipe Tips and Swaps:
Vegetables – Create a classic pot roast by adding vegetables to the slow cooker with the roast. While I prefer to make vegetables to serve as a side dish you can also add vegetables such as potatoes and carrots into the crockpot to cook with the pot roast.
Try adding in baby carrots or slice larger carrots into chunks. You can peel and dice potatoes into large chunks or just cut them into quarters. You can also add in baby potatoes with the skin on directed into the slow cooker. Try peeling and cutting an onion into quarters and add that with other vegetables.
Root vegetables should be cooked in the slow cooker for about 4 hours or until they are fork tender. Other vegetables (not firmer root vegetables) can be added in the last 2 hours of cooking to keep them from turning into mush.
Onion Soup Mix – you can use onion soup mix or try using one of the different flavors of onion soup mix that are currently available. At my local store I found that there were several flavors of dry onion soup mix including Onion Mushroom, Beefy Onion and even a Golden Onion soup mix (not shown in the picture below). You can swap out the regular onion soup mix for one of these other flavors and your pot roast will turn out just as delicious.
What to serve with Pot Roast:
Mashed Potatoes or Cauliflower Mashed Potatoes – this is my family’s favorite side dish. Actually, we put the flavorful roast and gravy on top of the potatoes rather than serve them on the side.
Egg Noodles – top them with the pot roast and gravy. Add some vegetables on the side for a complete meal.
Carrots – another favorite to serve on the side or to include in the slow cooker with the roast.
Green Beans, Broccoli, Cauliflower and even green salads are some of our other favorite sides.
