These red velvet cake mix cookies are so easy to make. If you have a box of cake mix, a few eggs, some vegetable oil and 10 minutes of time you can have delicious homemade cookies.
Red Velvet Cake Mix Cookies
I love cake mix cookies. They don’t take many ingredients and are so easy to make. The best part is I can quickly mix up a batch of bakery styled cookies in about 5 minutes.
Ingredients for Red Velvet Cake Mix Cookies:
Red Velvet Cake Mix – pick your favorite brand of red velvet cake mix.
Eggs – you’ll want to use large eggs.
Vegetable Oil – use your favorite light flavored oil such as vegetable oil or canola oil.
White Chocolate Chips – using white chocolate chips really makes them stand out against the red cookie.
Directions to make Red Velvet Cake Mix Cookies:
Preheat oven to 350 degrees.
In a large bowl combine the cake mix, eggs and vegetable oil until mixed.
Add white chocolate chips and stir until just combined.
Using a mini ice cream scoop or a tablespoon, portion out the dough 2 inches apart on an ungreased baking sheet.
Bake 9 to 10 minutes or until edges are slightly brown.
Remove from the oven. Cool 5 minutes before removing from the baking sheet.
Do I need to grease my baking sheet?
You can make these cookies on an ungreased baking sheet. I’ve never had a problem with these cookies sticking but you can use parchment paper or even a silicone mat if desired.
Storage Instructions:
Store in a storage bag or covered container at room temperature 3 to 5 days. Store longer in the refrigerator.
What brand of cake mix should be used for these cookies?
Any about brand of mix will work. Most cake mixes are about 15 to 18 ounces in size. The slight difference in sizes of cake mix doesn’t affect the finished cookies.
For this recipe I used Duncan Hines brand cake mix. It is a 15.25 ounce box. Betty Crocker also makes a red velvet cake mix that is the same size. You may find other mixes in your local store that weigh a bit more. Having made other cake mix cookies I can tell you that this recipe is very forgiving even if your cake mix size is a couple of ounces more.
My cookie dough is a bit sticky. Is that ok?
Cake mix cookie dough can be a bit sticky. This consistency is normal. You will find that the dough is easy to scoop and won’t stick to your spoon or mini scoop. If you find it too sticky you can easily mix in a tablespoon or two of all purpose flour.
I don’t have white chocolate chips. Can I use something else?
Red velvet cookies are made with cocoa so just about anything that you would add into a chocolate cookie will taste great in red velvet cookies. You can swap out the white chocolate chips and try any type of chocolate chip, chopped nuts, M&M’s or a combination of any of these.
