There are several options for sweetening this coleslaw recipe. If you are following a keto or other type of low carb diet then this will soon become your go to coleslaw recipe.
Cabbage is a perfect low carb and keto friendly vegetable. But you don’t need to be on a keto diet to benefit from eating cabbage. Cabbage is a good source of dietary fiber, vitamin C, vitamin K, vitamin B6, folate and manganese.
The creamy dressing is made from a few simple ingredients which you probably already have in your kitchen and refrigerator.
Why would you want to make your own coleslaw dressing?
Easy, the ready made store bought dressings and regular coleslaw are loaded with too much sugar. A quick look at several deli and grab and go coleslaws that were available at my local grocery store contained anywhere from 9 grams of carbs to 17 net grams carbs per 1/2 cup!
This sugar free coleslaw recipe comes in at just 2 net grams of carbs for a 1 1/2 cup serving!
Easy Sugar Free Coleslaw Recipe
For this low carb coleslaw recipe you can use a bag of shredded cabbage mix. I’ve seen several types of these pre-shredded coleslaw mixes in my local grocery stores. Some contain just green cabbage and carrots and others contain cabbage, carrots and red cabbage. Either of these will work for this recipe.
You can also make this using a whole cabbage head. It’s easy to shred cabbage yourself whether by hand or by using a food processor.
Ingredients for Sugar Free Coleslaw Recipe:
- Green cabbage – green cabbage is used in this recipe. You can replace some of it with another type of cabbage such as red cabbage, Napa cabbage or savoy cabbage. You can also replace the cabbage and carrots with a bag of coleslaw mix. You’ll save time since the coleslaw mix is already shredded.
- Carrots – these are traditionally included in coleslaw recipes. If you are using a pre-shredded coleslaw mix then it will most likely include shredded carrots in it. If you are shredding your own head of cabbage then you will need either whole carrots, which you shred, or store bought shredded carrots.
- Mayonnaise – I used regular mayonnaise for this recipe. You can use your favorite type of mayonnaise with this recipe. If you are trying to follow a low carb diet you will want to avoid using light mayoor fat free mayonnaise. These types of mayonnaise contain modified food starch and will have a higher carb count.
- No Calorie Sweetener – to keep this recipe sugar free you will want to use a sugar-free sweetener. You can use sweeteners such as Swerve, Monk Fruit, Splenda, Stevia or any other sugar replacement.
- Apple Cider Vinegar – this gives the coleslaw a tangy flavor. You can use white vinegar, red wine vinegar or white wine vinegar in place of apple cider vinegar.
- Dijon mustard – use your favorite brand of Dijon mustard for this recipe.
How to make this Sugar Free Coleslaw:
If using bags of pre-shredded coleslaw mix following these directions:
Start by mixing up the recipe ingredients. In a bowl mix the sweetener with the apple cider vinegar to ensure that it’s well dissolved. Then add in the Dijon mustard and mayonnaise. Stir until well combined.
Fold in the shredded cabbage mixture.
Chill for an hour and serve.
If using a whole cabbage to make this coleslaw recipe follow these directions:
Start by cutting the cabbage in half. Remove the core and wash it well. Also give the carrots a good scrub too. Set the cabbage aside and allow the water to drain out.
You can create shredded cabbage several ways – using a hand grater, a food processor or a sharp knife. Using a hand grater or a food processor shred the carrots and place in a large mixing bowl. If you don’t have a hand grater or a food process create cabbage shreds by laying a half a cabbage flat on a cutting board. Slice the cabbage thinly.
If using whole carrots you will also want to prepare them by shredding them.
To make the coleslaw combine the sweetener with the apple cider vinegar in a large bowl to make sure that the sweetener is dissolved. Then mix in the Dijon mustard and mayonnaise.
Add in the shredded cabbage and carrots. Stir well to coat with the dressing. Chill the coleslaw for an hour then serve and enjoy!

How to store Sugar Free Coleslaw:
You can store this coleslaw in a covered container in the refrigerator for 3 to 5 days.
Can you make sugar free coleslaw ahead of time?
If you are trying to make coleslaw ahead of time for a party or gathering the best thing to do would be to prep the cabbage and dressing mix but keep them in a separate bowl. The cabbage and dressing will last much longer when they are not mixed together. Shred the cabbage and carrots, unless using a bag of shredded coleslaw mix, and store in a covered container in the refrigerator for a week before mixing with dressing to make the coleslaw. Do the same with the dressing mix….combine and store in an air-tight container until you are ready to mix the two.
Is this coleslaw keto friendly?
Yes! By using a keto friendly sweetener this recipe is perfect for anyone following a low carb or keto diet. This recipe makes 8 good sized servings (1 1/2 cups each) that have just 2 grams net carbs per serving.

Yes this is a healthy coleslaw recipe. Coleslaw, especially one that isn’t loaded with added sugar, is healthy for you. Can coleslaw be frozen?
Yes and no. While you can freeze a mayonnaise based coleslaw it will change texture when thawed. Mayonnaise does not do well in the freezer and will separate. The watery mayo, combined with the thawing cabbage becoming soft, makes for a soft watery mess that isn’t the crisp and crunchy coleslaw that you want to eat.
