I don’t know about you but I love crockpot meals that not only save me time but tastes delicious too. This low carb Italian Chicken Stew does both AND you can also prepared it as a freezer dump meal too to help save you extra time in the future.

You can use boneless, skinless chicken breasts, thighs or whatever type of chicken you like for this recipe.
Swap out the chicken for turkey and this tastes just as delicious!
I usually use a combination of types of chicken. To estimate how much to purchase I plan for 1 chicken breast or two chicken thighs per person. You can cook them whole (as shown in the picture) or you can dice up the chicken.
Ingredients for Keto Italian Chicken Stew:
Onion – use one medium sized onion, diced
Frozen Green Beans – I like to use frozen green beans because they hold up to being cooked in the crockpot without becoming mushy.
Diced tomatoes – use your favorite brand. You’ll want to use a 15 ounce can of diced tomatoes.
Crushed Tomatoes – again use your favorite brand. You’ll also need a 15 ounce can of crushed tomatoes
1 to 1 1/2 pounds of boneless, skinless chicken breasts or chicken thighs – I prefer to use a combination of breasts and thighs. Some family members like one type of meat over the other. You can use all of one type or a combination of the two.
Garlic – you can use fresh minced garlic or jarred garlic for this recipe. Don’t have either one on hand? Then use 1 teaspoon of granulated garlic or 1/2 teaspoon of powdered garlic.
Seasonings – you’ll need dried oregano, dried basil, salt and pepper
Parmesan Cheese – use shredded or freshly grated Parmesan Cheese for this recipe.
To make this Italian Chicken Stew:
In the crockpot add the diced onion, diced tomato, crushed tomato, minced garlic, oregano and basil. Stir well.
Top with the pieces of chicken and press them so they just begin to sink into the liquid.
Sprinkle with salt and pepper.
After cooking for 4 hours add in the string beans.
Cook on low heat for 6 hours or until the internal temperature of the chicken is 160 degrees.
Stir well and serve. Sprinkle Parmesan cheese on top when serving.
Ingredients needed for freezer meals:
This recipe makes a great freezer meal. You can easily put all the ingredients into a freezer bag. When you are ready to make the recipe just dump it into the crockpot, turn it on and cook until the chicken is soft.
Use good quality freezer bags. My favorite are the Glad freezer bags. You’ll need a gallon sized bag for each freezer meal you want to make. I don’t add the frozen green beans to the bag. They are already frozen so I just make sure I had a bag on hand when I go to make the meal.
Start by writing the name of the recipe on the bag with a Sharpie or use whatever method you prefer to label your bags. Include the instructions to add a bag of frozen green beans when cooking.
In a freezer bag start by placing your chicken breasts or thighs in the bottom of the bag. Pour the diced and crushed tomatoes over the chicken. Sprinkle the seasonings on top of the tomatoes. You can stir the seasonings into the tomatoes if desired.
Seal the freezer bag and make sure to push out any excess air.
To make this freezer meal in the crockpot:
Empty the contents of the freezer bag into the crockpot. Top with the frozen green beans.
Turn the crockpot on high. Cook 6 hours or until the chicken is tender.
Top each bowl with some of the Parmesan cheese.

Stovetop Instructions:
This recipe can also easily be made on the stove top.
Dice whatever chicken you are using (boneless breasts or thighs). Chicken breasts are shown being used in the recipe below.
In a large pot add the olive oil or butter. Saute the diced onions until softened. Add the diced chicken and cook, stirring occasionally, until browned and no longer pink.
Add the diced tomatoes, crushed tomatoes, string beans and spices to the pot.
Simmer over a medium heat for 10-15 minutes.
Add salt and pepper to taste.
Serve and top with shredded Parmesan cheese if desired.

- Salt and Pepper to taste
Instructions
- Into the crockpot add the diced onion, diced tomato, crushed tomato, minced garlic, oregano and basil. Stir well.
- Add in the green beans and stir again.
- Top with the pieces of chicken and press them so they just begin to sink into the liquid.
- Sprinkle with salt and pepper.
- Cook on low heat for 8 hours or until the internal temperature of the chicken is 160 degrees.
- Stir well and serve.
