Ingredients

  • 1 Onions
  • 16 ounce Green beans
  • 15 ounce can fire roasted diced tomatoes
  • 8 ounce crushed tomatoes
  • 16 ounces boneless, skinless chicken breasts
  • 2 teaspoons Garlic, minced
  • 2 teaspoons Oregano
  • 2 teaspoons Basil
  • Salt and Pepper to taste

Instructions

  • Into the crockpot add the diced onion, diced tomato, crushed tomato, minced garlic, oregano and basil. Stir well.
  • Add in the green beans and stir again.
  • Top with the pieces of chicken and press them so they just begin to sink into the liquid.
  • Sprinkle with salt and pepper.
  • Cook on low heat for 8 hours or until the internal temperature of the chicken is 160 degrees.
  • Stir well and serve.

Notes

If using canned string beans add them to the crockpot about 1 hour before serving as they are already cooked and only need to be heated up.
Use chicken thighs in place of the chicken breasts.
