Easy Sheet Pan Gnocchi Sausage and Vegetables Recipe

This easy-to-make one pan dinner includes a delicious mix of Gnocchi, Sausage and Vegetables all cooked to perfection on one sheet pan. It’s such as easy meal to make and the whole family loves it!

This recipe is so versatile. It can easily be made in a skillet, on a baking sheet as a sheet pan dinner or even in the air fryer. No matter which cooking method you use this this recipe turns out delicious every time.

Sheet Pan Gnocchi Sausage and Vegetables

You can use shelf stable gnocchi but my favorite type is the fresh, ready made gnocchi. My favorite brand is the skillet gnocchi from Giovanni Rana. It’s soooo good!

I use broccoli, cherry tomatoes, red onion, red and yellow bell peppers. But you can swap it out with your favorite vegetables. This tastes delicious with just about any type of vegetable.

Ingredients for this Gnocchi, Sausage and Vegetables Recipe

You’ll need the following ingredients to make this recipe:

  • Smoked sausage – I used Hillshire Farms Smoked Sausage.
  • Ready-made gnocchi – I love Giovanni Rana Skillet Gnocchi (found in most grocery stores in the section with fresh pasta). If you love crispy gnocchi then use this type.
  • Bell Peppers – you’ll want 1 red pepper and 1 yellow pepper
  • Red Onion – 1 medium to large sized red onion, coarsely chopped
  • Cherry Tomatoes – one pint of grape tomatoes or cherry tomatoes. I like using the slightly larger grape tomatoes.
  • Broccoli florets – you will need about 8-10 ounces of broccoli florets
  • Italian dressing – use your favorite store bought brand or homemade dressing. You will want to use a regular or lite Italian dressing as the oil in these dressings help to coat the gnocchi and vegetables allowing them to brown.
  • Shredded Parmesan cheese – I grated a block of Parmesan cheese but you can use your favorite already shredded cheese.

How to make this one page dinner (oven directions):

Pre heat oven to 400 degrees

Spray baking 1-2 baking sheets with non-stick spray or line with parchment paper

In a large bowl mix together the smoked sausage, gnocchi, tomatoes, broccoli florets, red pepper, yellow pepper and red onion.

Pour Italian dressing over mixture in bowl.

Spread evenly over a large sheet pan in a single layer.

Bake 15 to 20 minutes.

Remove from the oven, stir, spread out evenly and return to the baking sheets to the oven to bake another 10 minutes or until the vegetables are tender.

Remove from oven and divide shredded parmesan cheese over the top.

Serve and Enjoy!

Gnocchi, Sausage and Vegetables (Air Fryer Directions):

Preheat your air fryer according to the manufacturer’s directions.

Place half of the gnocchi mixture (see air fryer note below) into the air fryer basket. Spread out in an even layer. Cook in the air fryer at 375 degrees for 12 minutes.

Remove the cooked gnocchi and sausage from the air fryer basket and repeat the process with the remaining mixture.

Diving the shredded parmesan cheese over the top.

Serve and enjoy!

Note about air fryers: This recipe was made in a 7 quart air fryer. If you have a smaller sized air fryer you may need to divide the mixture into 3 batches to ensure that everything is evenly cooked.

Don’t over fill the air fryer basket. This will prevent the gnocchi mixture from cooking evenly.

Storage Instructions:

Store any leftover gnocchi with sausage in a covered airtight container in the refrigerator for 3 to 5 days.

Can This Recipe Be Prepped Ahead?

Yes, this recipe is perfect for prepping and is great for those busy weeknight dinners when you’re short on time.

Cut and chop all the vegetables (red/yellow peppers, onion and broccoli) and sausage. Place in a container with an airtight cover (helps to keep your refrigerator from smelling like onions) or a storage bag and store it in the refrigerator up to 3 days before using in the recipe.

When it comes time to cook mix with the gnocchi, cherry tomatoes and Italian dressing. Bake according to the directions.  

Can I use another type of sausage in this recipe?

Sure, you can easily swap out smoked sausage with any type of sausage (Italian sausage links, sweet Italian sausage, spicy sausage, apple sausage, chicken sausage, kielbasa, etc). If using sweet or hot Italian sausage you will want to cut them into pieces no more than 1/2 an inch thick to ensure that they cook through and are done at the same time as the other ingredients.

If you prefer, you can use a plant based sausage such as Beyond Sausage or Field Roast sausage.

You can even leave out the sausage for a vegetarian dish. Make this more filling by doubling up on the gnocchi if you leave the sausage out.  

What if I don’t like these vegetables? Can I use something else?

If you don’t like some of the vegetables in this recipe you can swap them out with something you would enjoy more.

I’ve made this recipe using green beans, cauliflower, zucchini, summer squash and many other fresh vegetables. Try adding in fresh baby spinach, brussels sprouts and even your favorite mushroom (try baby bella mushrooms cremini mushrooms).

Chop firmer vegetables such as potato, sweet potato or any type of firm squash (butternut, acorn, etc) into cubes about 1 inch in size to allow them to cook evenly.

Can I use a different dressing with this sheet pan dinner?

Yes you can easily use another type of dressing with this sheet pan dinner. You will want to look for an oil and vinegar type of dressing such as some type of Italian Dressing or a Vinaigrette dressing. The oil helps to coat the ingredients making them cook more evenly.

Don’t have Italian Dressing on hand? Why not make a quick homemade version by mixing together the following:

  • 3/4 cup olive oil or vegetable oil
  • 1/4 cup red wine vinegar, white vinegar or balsamic vinegar
  • 2 to 3 teaspoons of Italian Seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • black pepper to taste

Blend well and store any leftover dressing, after using some for this recipe, in an airtight container in the refrigerator. It will taste its best if used within 2 to 3 weeks.

Other variations:

If you want to add a little spicy flavor to the meal you can also sprinkle 1/2 a teaspoon of red pepper flakes over the gnocchi mixture before cooking.

Try adding a tablespoon of pesto into the Italian Dressing.

Sprinkle a tablespoon of chopped fresh basil over the top of the finished dish.

Swap out the parmesan cheese for mozzarella or even feta cheese.

  • 16 ounces Smoked Sausage sliced into 1/2 inch thick rounds

  • Follow the above steps to prepare the ingredients through step 3.
  • Preheat your air fryer according to your model's directions.
  • Place half of the gnocchi mixture (see air fryer note below) into the air fryer basket. Spread out in an even later. Cook in the air fryer at 375 degrees for 12 minutes.
  • Remove the cooked gnocchi and sausage from the air fryer basket and repeat the process with the remaining mixture.
  • Diving the shredded parmesan cheese over the top of the gnocchi and sausage. Serve and enjoy!
