Easy Beef and Chorizo Chili Recipe (No Bean, Keto)

This easy Beef and Chorizo Chili Recipe will have everyone asking for seconds. It’s packed with flavor from the smokey, slightly spicy chorizo. It’s a delicious twist on traditional beef based chili.

This chili does not contain beans so it’s perfect for anyone following a keto diet or isn’t a fan of beans. However, if you enjoy beans in your chili it’s easy enough to add in a can of kidney beans, pinto beans or even black beans.

Easy Beef and Chorizo Chili Recipe

This chili doesn’t take many ingredients. You probably already have many of them on hand in your kitchen. Here’s what you’ll need:

Ground Beef – I used 80/20 ground beef.

Ground Chorizo – I used Johnsonville Chorizo in this recipe. This is a pork based chorizo that is found in the grocery store in the same section with other sausage such as Italian sausage or flavored sausage.

Diced Onion – use a medium sized onion.

Bell Pepper – I used a green bell pepper. You can use red, yellow or orange bell pepper if desired.

Garlic – use fresh cloves of garlic or use jarred minced garlic for this recipe.

Green Chiles – I used a 4 ounce can of green chiles.

Diced Tomatoes – If you have fired roasted diced tomatoes available in your local grocery store you can use those in this recipe.

Tomato Sauce – I used a store brand tomato sauce. Use your favorite store brand or even homemade sauce for this recipe.

Beef Broth – canned beef broth works for this recipe. If you are trying to watch your salt intake choose a low salt or no salt variety.

Liquid Smoke – look for liquid smoke in the section where you find BBQ sauce. Liquid smoke gives a delicious grilled, smokey flavor to the chili. If you don’t have it or can’t find it this can be left out. The chili will still be delicious.

Spices including chili powder, cumin, oregano, salt and pepper.

Not shown in the picture is a small amount of olive oil that I use to sauté the vegetables.

Toppings: serve the chili with your favorite toppings such as shredded cheese, sour cream, sliced green onions, sliced olives or even sliced jalapenos.

How to make this Beef and Chorizo Chili:

In a large stock pot, over medium heat, add the olive oil, onions, garlic and bell pepper. Sauté for 3 to 4 minutes or until they have started to soften.

Add in the ground beef and ground chorizo and brown while breaking it into small crumbles.

Add the diced tomatoes, green chiles, tomato sauce, liquid smoke as well as the spices. Stir well to combine.

Turn the heat to medium low. Add in the beef broth and stir well. Cook over medium low heat. Allow the chili to cook while stirring occasionally for 15 minutes to allow the flavors to blend.

How to garnish this beef and chorizo chili:

You can top this chili with your favorite garnishes such as shredded cheddar cheese, sour cream, sliced green onions, sliced olives, avocado slices or chunks, cilantro, sliced jalapenos or whatever else you like on top of your chili.

How to store this beef and chorizo chili:

This chili can be stored in the refrigerator in a covered container for about 5 days for the best flavor. If you need to keep leftovers longer then it would be better to freeze them. See below for more freezer tips.

Can this Beef and chorizo chili be frozen?

Yes this chili recipe is perfect for freezing! I will often double the recipe so I can store leftovers in individual serving sizes to be used for a quick lunch or dinner. Portion your leftover chili into covered containers and store for up to 3 months in the freezer.

Serve the chili with your favorite toppings including shredded cheddar cheese, sour cream, sliced green onions, sliced or whatever else you enjoy on top of your chili.

Is this beef and chorizo chili keto?

Yes it is. This chili recipe does not contain the high carb ingredients such as beans, corn or other starchy vegetables such as potatoes that would make the chili not keto. The carbs come from the tomatoes, onions and bell pepper. This chili is great if you are on a keto or low carb diet.

This recipe is easy enough to convert to a more traditional, bean chili to feed those family members who aren’t on a keto diet? They like to add black beans or pinto beans into their bowls of chili.
