Ingredients for Cilantro Lime Coleslaw

ingredients to make creamy cilantro lime coleslaw

Here’s what you’ll need to make this recipe:

  • Bag of Coleslaw Mix – You can keep this recipe fast and easy to make by using a bag of coleslaw mix that you’ll find in the refrigerated section at your local grocery store. You can also make your own coleslaw mix by shredded or thinly slicing a small head of cabbage (green cabbage or even Nappa cabbage) as well as some carrots.
  • Mayonnaise – use your favorite mayonnaise as a base to make the coleslaw dressing. If you make homemade mayonnaise it would be great in this recipe.
  • Fresh Cilantro – this recipe calls for washed and finely chopped cilantro for a boost of flavor to the dressing.
  • Lime – you’ll want to have at least 1 lime so you can get the fresh lime juice and the lime zest for this recipe.
  • Honey – to add a touch of sweetness to the tangy slaw mix.
  • Rice Vinegar – adds a tangy flavor to the dressing. If you don’t have rice vinegar you can use apple cider vinegar, white wine vinegar or even red wine vinegar.
  • Seasonings: you’ll need garlic powder, cumin, black pepper and salt.

Recipe Tips and Swaps:

Want to mix things up with this homemade coleslaw recipe? Try swapping some of the ingredients above or even adding a few of these in:

  • Red Cabbage or Purple Cabbage – add handful or two of shredded red or purple cabbage to add a boost of color to your coleslaw.
  • Use a different creamy base for the dressing: If you love a good mayo-based coleslaw, feel free to use mayo in place of Greek yogurt, or do a 50/50 blend. Or for an even tangier slaw, feel free to use sour cream in place of Greek yogurt, or do a 50/50 blend.
  • Jalapeño Pepper: add a little heat to your coleslaw by adding some finely diced fresh jalapeno pepper into the coleslaw mix.
  • Chipotle Pepper: for a bit of smokey heat by adding a finely chopped chipotle pepper or a tablespoon of the adobe sauce into the dressing mix.
  • Add in more vegetables: you can always add in more vegetables to your coleslaw mix. Try adding in thinly sliced bell peppers,  julienned carrots, red onion, radish or other crunchy vegetables.

How to store Cilantro Lime Coleslaw

If you have leftover coleslaw, store it in an airtight container in the refrigerator for up to four days.

Planning on serving this at an outside gathering? Due to the mayonnaise in the recipe you’ll want to keep this refrigerated until your ready to serve. Try filling a large mixing bowl with ice and place the bowl or container with the coleslaw on top of the ice filled bowl to keep it cool. Don’t leave the coleslaw at room temperature for more than 2 hours to prevent issues with spoilage.
