What I Ate Wednesday #10

Yet another week has whizzed on by and it’s time for another What I Ate Wednesday link up over at Peas and Crayons. This month’s theme is:
Thankfully a stiff, sore knee does not affect making food. Here’s what I had for breakfast:
Cup of coffe along with the daily vitamins (multivitamin, vitamin C and iron). Also made of thermos filled with coffee for school. Along with the morning joe I had this:
A honeycrisp apple (my fav!) and a half of a ham sandwich. Yes, that was breakfast. Today is lab day. This means that I leave for school at 8:30, have 3 classes and a 3 hour lab. I finally escape school around 5:30. Then comes the long drive home. So I packed myself a bunch of things to keep me going:
Click protein shake , 2 cheese sticks and a bag of mixed nuts. I also packed a lunch which I never actually had time to eat. It ended up being my supper. This is what I brought:
Hummus and sliced yellow peppers along with a quesadilla made with more yellow peppers, cheddar cheese and thin slices of leftover meatloaf. Hey, how else is the meatloaf going to get used up? I also packed homemade salsa. I ate the hummus and peppers at school. The quesadilla came home and I had it for supper along with more hummus and peppers.
I finished the day by having a piece of this:
