Mediterranean Lemon Herb Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup Lemon Juice
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Garlic, minced
  • 3 ounces pesto

Instructions

  • In a large freezer bag or a container mix together the olive oil, lemon juice, red wine vinegar, minced garlic and pesto.
  • Add chicken and toss to coat.
  • Place in refrigerator and marinate for 6 to 8 hours.
  • Place chicken on the grill and cook until a thermometer reads an internal temperature of 165 F.
  • Or place in a 400 degree oven and cook until the chicken is no longer pink and a thermometer reads an internal temperature of 165 F.

Notes

Use any type of chicken.....boneless, skinless breasts, chicken tenders, chicken wings, thighs, etc.
