In a large skillet brown the ground pork over a medium heat. Make sure to break it up while cooking so it is in small crumbles.
Add the coleslaw mix to the pan and stir in. Turn the heat down to medium low and cook for 5 to 8 minutes or until the coleslaw has softened a bit.
Turn the heat down to medium low and add the remaining ingredients (soy sauce, fish sauce, toasted sesame oil, garlic and ginger). Stir well. Cook another 2 to 3 minutes to allow the flavors to blend.
Turn off heat and enjoy!
If desired, sprinkle with green onions and sesame seeds before serving.
Serve as is or serve over white rice, brown rice, chow mein noodles or cauliflower rice.
Notes
Optional: Sprinkle green onions and sesame seeds over the dish before serving. Add a bit of heat by adding a some crushed red pepper, adding a dash of sriracha sauce or even a small amount of garlic chili paste.
