Some days you just want a fresh baked cookie but you don’t want to be bothered having to pull out a bunch of ingredients to whip up a batch. The answer to your cookie craving are these easy to make pumpkin cake mix cookies.
Cake mix cookies are incredibly easy to make. It just requires a box of cake mix, a can of pumpkin, one egg and the mix ins of your choice and you can have delicious, freshly baked pumpkin cookies in 15 minutes.
Pumpkin Cake Mix Cookies
Ingredients:
- 1 box yellow cake mix
- 1 (15 ounce) can pumpkin
- 1 egg
- 2 teaspoons ground cinnamon
- 1 cup semi sweet chocolate chips
Directions:
Preheat the oven to 350 degrees F.
Grease a baking sheet or line with parchment paper.
In a large bowl, whisk the cake mix and cinnamon together.
Add the egg and pumpkin to the bowl with the cake mix. Mix until just combined.
Stir in the chocolate chips.
Using a small ice cream scoop (2 tablespoon size) portion out the batter on the prepared baking sheet about 2 inches apart.
Bake 13 to 15 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Allow the cookies to cool 4 to 5 minute and then transfer to a wire rack to finish cooling.

Can you use any type of cake mix?
Yes just about any brand of cake mix will work. I’ve tried most of the brands found in my local stores (Betty Crocker, Pillsbury, Duncan Hines, etc) plus some generic or other name brand mixes. These currently run about 15.25 ounces per box. If your boxed cake mix is more than 18 ounces in size you will notice that the cookie dough becomes thick and may take a bit longer to bake properly.
Can I use something else in place of the chocolate chips?
Yes. You can leave them out or swap the chocolate chip for another type of baking chip. Try white chocolate, milk or dark chocolate or even butterscotch chips in place of the semi sweet chocolate chips.
