They are perfect to eat with the usual breakfast type foods such as eggs when on the keto diet. Why not switch it up a bit and sandwich these sausage patties between two low carb pancakes, chaffles (low carb cheese waffles) or even keto cheddar biscuits.
Low Carb Breakfast Sausage
I had been buying premade breakfast sausage (links, patties and larger bulk rolls) but the prices on them have been going up and up lately. Besides the cost, depending on which brands you buy, they can be a source of hidden sugar. This is usually from flavorings, such as maple flavoring, as well as some of the ingredients used to create that smokey flavor that makes the sausage taste so good.
You can stop and check the labels to look for hidden carbs or you can make your own sausage at home. The recipe is super easy and you get to control the carb count by controlling the ingredients.
I save even more money on making these by watching for a sale on the ground pork (or other ground meat if you use a blend) and then double or triple the batch to freeze some for later. That also makes this recipe a huge time saver too!
Pass on those premade store bought breakfast sausage patties and links and make your own! It’s super easy to do! You can use all ground pork or try a combination of pork with beef, turkey or even ground chicken.
Ingredients for Low Carb Breakfast Sausage
- Ground Pork – ground pork is the meat typically used to create breakfast sausage. However you can easily use just about any type of ground meat including beef, turkey, chicken or even a combination of these meats.
- Seasonings – this is what gives breakfast sausage the flavor that you love. The seasonings used include a combination of herbs and spices. You’ll need salt, black pepper, sage, ground nutmeg, ground ginger and crushed red pepper flakes. If you like spicy sausage you can add extra red pepper flakes.
- Sugar Free Maple Syrup – this ingredient is optional but I always add a bit in to create delicious maple flavored breakfast sausage. To keep it low carb or keto you’ll want to use a sugar free maple syrup. This will give you all the great maple flavor without the added sugar found in regular syrup.
How to make Low Carb Breakfast Sausage
Step 1: In a large bowl combine the ground pork, salt, black pepper, sage, ginger, nutmeg and crushed red pepper flakes. Mix the spices well into the ground meat.
Step 2: Once you are done mixing, form the meat into patties.
Shape the meat mixture into 6 to 8 patties, about 3 inches wide.
Step 3: Heat a skillet over medium-high heat. You can add a little olive oil or nonstick cooking spray to the pan.
Cook the patties about 6-8 minutes. Flip and cook another 5 minutes or until the patties are brown and the center is no longer pink. You can also check the internal temperature of the pork. They are cooked when the internal temperature reaches 145 degrees F.
How to store leftover Low Carb Breakfast Sausage
Store any leftover breakfast sausage in an airtight container or in a food storage bag in the refrigerator for 3 to 5 days.
Can I freeze Low Carb Breakfast Sausage?
Yes you can. These sausages are also great to store in the freezer.
You can store the already cooked sausage in a freezer safe container or a freezer bag for 3 months. Don’t forget to label your container or bag with the date and the name of the recipe. This way you always know when it was added to the freezer.
You can also store the uncooked patties in the freezer. I personally like this method as I like the taste of freshly cooked sausage.
The secret to making meal prep easier are waxed paper squares.
You can cut them yourself from a larger sheet or you can buy them already precut. These are designed for separating burgers but they work great for lots of other items. They can sometimes be found in local stores but I usually just purchase the boxes on Amazon.
I use waxed paper squares to create my meal prep breakfast sausages, burgers and my favorite cilantro chicken burgers.
While you can just stack the patties between waxed paper you’ll want to use this method below to keep from having a giant mass of frozen patties that you can’t pry apart. I’m sure you’ve run into this problem with store bought frozen burger patties. No matter how much you fight with them you can’t just seem to get them to separate. The trick is to make sure that each patty is frozen between a waxed square before you freeze them.
Here’s how I prep my freezer breakfast sausage patties.
I start by placing some of the waxed squares down on a cookie sheet.
Place a patty on each square of waxed paper. You can hand form thicker, rounder patties or use a cookie scoop to portion them out.
Once you portion them out on to the waxed square. Place another sheet of waxed paper on top.
If you haven’t formed patties by hand you can gently press down on the top square of waxed paper to form a thin patty. I often use this method because the thin patties cook up quicker. I don’t even have to thaw them out in order to cook them quickly. In just a few minutes I can have a cooked sausage ready for breakfast.
Place the baking sheet with the patties into the freezer. You’ll want to keep them on the cookie sheet so they retain their shape until frozen.
Once frozen you can then stack them and place them in a freeze bag. By having this double layer of waxed paper this will keep the patties from freezing together.
To cook the frozen patties:
If they are frozen you can just place them still frozen in the skillet to cook. No need to thaw. Actually it’s easier to make them that way because they peel away from the waxed paper so easily when they are still frozen.
To make them quick cooking simply press them until they are about 1/2 to 3/4 of an inch thick. See the picture below. When they are this thick you can cook them up quickly in 5 or 6 minutes.
This recipe can be doubled or tripled easily if you want to meal prep extras. It just depends upon how big a mixing bowl you have to work with.
Once you’ve got yourself a supply of these delicious maple breakfast sausages why not make yourself a keto breakfast sandwich. Try using a Chaffle (a cheese based waffle) in place of high carb buns. Or use your favorite low carb bread or keto biscuits.
Add an egg or just a slice of cheese and you’ve got a fast and easy keto breakfast sandwich that you will LOVE!
