Keto Cajun Shrimp and Vegetables Recipe
This recipe is made with Andouille sausage. This is a smoked sausage made from pork and a blend of spices. It’s usually got a little heat to it. I can find several varieties in my local grocery store. You may not be so lucky.
If you are having trouble finding a no sugar added andouille sausage then check out Niman Ranch sausages. They have a store locator on their website and can be found at many local stores.
If you can’t find it then substitute another variety of smoked sausage such as Polish Sausage or Kielbasa. You may want to add a bit more Cajun seasoning as this variety of sausage is missing the bit of heat found in Andouille sausage.
Cajun Shrimp and Vegetables Ingredients:
- 1 pound large shrimp, peeled and deveined
- 3 tablespoon extra virgin olive oil
- 3 Cajun Andouille sausage links (3 ounces each/9 ounces total), sliced
- ½ medium white onion, finely diced
- 2-3 large cloves garlic, minced
- 1 medium orange or red bell pepper, finely diced
- 1 medium green bell pepper, finely diced
- 1-2 tablespoons Cajun seasoning
- 1 small yellow squash, sliced and cut into half rounds
- 1 small zucchini, sliced and cut into half rounds
- 2 tablespoons fresh parsley, finely chopped
- Sea salt and black pepper, to taste
How to make Cajun Shrimp and Vegetables:
- If not using a store bought Cajun seasoning then start by preparing the Cajun seasoning by combining all ingredients together in a bowl. Set aside.
- Toss the shrimp with one tablespoon olive oil and one-half tablespoon Cajun seasoning. Set aside.
- In a large skillet, over medium heat, add the Andouille sausage. Cook, stirring occasionally, until the sausage is browned, approximately 4-5 minutes. Transfer sausage to a plate and set aside.
- Add one tablespoon olive oil to the skillet, along with the seasoned shrimp. Spread the shrimp into a single layer in the skillet. Don’t overcrowd them. Cook, stirring once, until the shrimp is opaque and starts to curl. This should take approximately 2 minutes. Do not overcook or your shrimp will have a rubbery texture. Transfer the shrimp to the plate with the sausage.
- Add the remaining olive oil to the skillet. Add the onion, garlic, and the diced bell pepper. Sprinkle with additional Cajun seasoning, to taste, and stir to combine. Cook, stirring frequently, until the vegetables soften, approximately 4-5 minutes.
- Add the yellow squash and zucchini to the skillet. Cook stirring frequently until they are crisp and tender. Remove the skillet from heat and stir in the Andouille sausage, shrimp, salt and pepper to taste and fresh parsley. Stir to combine and serve immediately.
What kind of shrimp should I use for this recipe?
You can use fresh or frozen shrimp for this recipe.
If using already cooked, frozen shrimp you will want to thaw them first so they don’t over cook in the skillet. Allow them to thaw over night in the refrigerator or run them under cold water. Since they are already cooked you will just be warming them up in the skillet.
Freezer Meal Prep Tips for Cajun Shrimp and Vegetables:
This Cajun shrimp and vegetables recipe is easy enough to turn into a freezer meal. The cooking order is a little different but the flavor is the same.
The easiest way to make a freezer meal is to prep another meal while making one to eat. Start out by doubling or tripling the ingredients.
Chop and prep all the vegetables needed to make the number of meals you desire. You are going to prep them all at once which is a big time saver when you want to make this again.
You will need one gallon and one quart sized freezer bag. Before you fill them label the gallon sized bag with the recipe name and the date. I write on them with a permanent marker but you can also put a sticker with the same information on the bag. Label it now while you can lay them flat to write on the bag.
Into a gallon sized freezer bag add the Andouille sausage, onion, garlic, bell pepper, yellow squash and zucchini. Sprinkle with Cajun seasoning (I use about 1 tablespoon but you can add however much you desire).
Place your shrimp into a separate quart sized freezer bag and sprinkle with a bit of Cajun seasoning (I use about 1 teaspoon).
The reason to place the shrimp in a separate bag is the shrimp will still take less time to cook than the rest of the dish. You don’t want to add them when the other items are cooking or they will get overcooked.
Place the quart sized bag with the shrimp into the larger gallon sized bag. Seal the bags and place in the freezer.
To cook your freezer meal:
Remove the bag from the freezer. Allow the food to thaw in the refrigerator overnight.
Heat 1-2 tablespoons of olive oil up in a skillet.
If any liquid has formed in the bag with the sausage/vegetables pour it off before adding the vegetables to the hot skillet. Saute until the vegetables are soft.
Add in the shrimp (pouring off any liquid that might have formed in the bag) and saute until the shrimp are cooked through.
Add any additional Cajun seasoning, salt and pepper to taste.
