Slow Cooker Cajun Chicken and Sausage Recipe

This recipe for Slow Cooker Cajun Chicken and Sausage is so incredibly easy to make. All the ingredients are tossed in the crockpot and 6 to 8 hours later you have a hot, delicious meal that’s bursting with flavor.

Slow Cooker Cajun Chicken and Sausage

This recipe is so easy to make. You can prep some of the ingredients ahead of time. Slice the peppers, onions and sausage the day before if desired. This helps to cut down on the prep time when you need to start this recipe cooking.

Ingredients for Slow Cooker Chicken and Sausage:

  • Boneless skinless chicken breasts – you can use chicken breasts or chicken thighs for this recipe. They all taste great and can easily be shredded once cooked
  • Smoked Beef or Andouille sausage – I’ve used both types of sausage in this recipe and they taste great no matter which one you choose. If you can’t find the Andouille sausage in your area then use a smoked beef sausage such as Hillshire Farms or another similar brand.
  • Fire roasted diced tomatoes – I love using fire roasted tomatoes. They are slightly sweet with a hint of smokiness when compared to regular canned diced tomatoes. If you can’t find fire roasted tomatoes go ahead and use regular diced tomatoes.
  • Tomato paste – adds to the tomato flavor
  • Sliced frozen peppers or 1 green bell pepper and 1 red bell pepper – You can use fresh or frozen peppers for this recipe. It doesn’t change the taste. Personally I love frozen sliced peppers. Not only do they save me time since I don’t have to slice them but, depending upon the season, they can be lower in price than fresh peppers.
  • Onion – use a large onion
  • Cloves of garlic, minced – freshly minced garlic adds to the flavor of this recipe
  • Salt and pepper – add these to your taste just before serving.

How to make Slow Cooker Cajun Chicken and Sausage:

Place the peppers and onions into the bottom of the crock pot. In the picture below the frozen pepper mix also included yellow peppers. Use whatever you like the best.

Add the sliced Andouille or beef sausage on top of the peppers and onions.

Add the tomato paste, fire roasted tomatoes and garlic on top of the peppers and onions. Sprinkle 1 tablespoon Cajun seasoning on top.

Mix the vegetables, sausage and Cajun seasoning together.

Place the chicken breasts on top of the vegetable and sausage mixture. Sprinkle with the remaining 1/2 tablespoon of Cajun seasoning mix.

Cover and cook on low for about 6 hours or until the chicken is tender. Using two forks shred the chicken and then stir to mix it into the vegetable/sausage mixture. Add salt and pepper to taste just before serving.

What to serve with Cajun Chicken and Sausage:

This tastes delicious when served over rice. We’ve also served it over pasta too!

If you are on a keto or low carb diet then serve this over riced cauliflower, zucchini noodles or shirataki rice.

Don’t forget to serve it with some Cheddar Biscuits.

How to store leftover Cajun Chicken and Sausage:

Place any leftovers in a covered container and store in the refrigerator for 3 to 5 days.

Can leftover Cajun chicken and sausage be frozen?

Yes it can easily be frozen. Place any leftovers in a freezer safe container. Mark the recipe name and the date on your container. Freeze for up to 6 months.

For the best flavor, freeze this recipe before you mix it with other food such as rice, pasta or riced cauliflower. This prevents the other items (rice, pasta, etc) from changing texture once thawed and reheated.

Can this be made into a meal prep freezer meal?

Yes this recipe makes a great meal prep freezer meal.

Simply add all the ingredients to a freezer bag and lay the chicken breasts on top. Seal the bag and freeze. To use, just thaw overnight in the refrigerator and place in the crockpot. Place the chicken breasts on top to cook as this makes shredding them easier if they are not at the bottom of the crockpot.

Notes

Sausage: Use smoked beef sausage or Andouille sausage
Peppers: Use green or a combination of colored peppers. You can also use frozen sliced peppers in place of fresh.
Tomatoes: You can replace the can of diced tomatoes with crushed tomatoes if desired.
Add in extra vegetables if desired. It tastes delicious no matter what you add in. Try spinach, collard greens, zucchini and squash. This is a great way to use up whatever you have on hand.

    Tastes fine, the step by step instructions are missing when to add the garlic. I’m sure it’s as simple as adding it in with the vegetables but definitely an oversight
