Place the peppers and onions into the bottom of the crockpot.
16 ounces Green Bell Pepper, 1 Onions
Add the sliced sausage on top of the peppers and onions.
16 ounces Andouille sausage
Add the tomato paste, tomatoes and garlic on top of the peppers and onions.
3 tablespoons tomato paste, 3 cloves Garlic, 1 - 14 ounce diced tomatoes
Sprinkle 1 tablespoon of the Cajun seasoning on top.
1 1/2 tablespoon Cajun Seasoning
Mix the vegetables and sausage together.
Place the chicken breasts on top of the vegetable/sausage mixture and sprinkle with 1/2 tablespoon of Cajun seasoning mix.
1 pound boneless, skinless chicken breasts
Cover and cook on low for 6 to 8 hours or until the chicken is tender and can be shredded.
Add salt and pepper to taste.
