Easy Steak Seasoning Recipe (Simple, Homemade Rub)

Ingredients to make this Steak Seasoning Blend:

  • Sea Salt or Kosher Salt – salt is used to bring out the flavor in the steak.
  • Cracked Black Pepper – add a bit of a spicy bit to the steak.
  • Granulated Garlic – I prefer to use granulated garlic in my seasoning mixes. If you have garlic powder you can use that as well but reduce the amount of garlic powder by half. Garlic powder is finer and has a stronger flavor than granulated garlic so you won’t need to add as much to the recipe to get the same flavor.
  • Paprika – this adds a sweet, slightly smokey flavor to the seasoning mix. It also adds a bit of color. Want an even smokier flavor? Then swap out the paprika for smoked paprika in equal amounts.
  • Thyme – adds a mild, herb flavor to the seasoning mix.

This recipe doesn’t get much easier. Combine all ingredients in a small bowl and mix until fully combined.

Tips and Substitutions:

If you want even more flavor, you can add a tablespoon of dried onion or one teaspoon of onion powder to the mixture.

Want a more herbal flavor? Try adding in a tablespoon of crushed rosemary to the mixture.

How to store this Steak Seasoning Mix:

Place the seasoning mix into a mason jar or other airtight container and store in your kitchen cabinet for 6 to 9 months for the best flavor.

Why season a steak?

Seasoning a steak not only adds flavor to the meat but the salt in the seasoning mix helps to keep the meat moist. Adding salt helps the protein fibers in the steak hold their shape. This in turn helps to hold in moisture giving you a nice juicy steak.

Is this similar to Montreal Steak seasoning?

No. Montreal Steak Seasoning does not contain paprika. Instead it will often contain cayenne pepper or red pepper flakes for a bit of heat as well as a bit of dill.

Steak Seasoning Versus Steak Rub:

Steak seasoning is a blend of herbs and spices that are used to add flavor to a steak. Seasoning can be used before and after cooking.

Steak rub are made with a coarser mixture of herbs and spices with the addition of some type of sugar such as brown sugar. The mixture is rubbed on the outside of the meat before grilling, smoking or cooking and it creates a nice crust on the outside of the steak.

A dry rub is typically only applied before the steak is cooked.

How to season your steak:

Start by bringing your steak to room temperature – about 30 to 60 minutes before cooking. This will help the steak to cook evenly. A cold steak will cook quicker on the outside while the inside takes longer to cook. This leads to people overcooking their steaks.

Season your steak right before you start to cook it. Adding seasoning too soon will cause the salt to dissolve and that will begin to pull moisture out of the steak.

Season both sides of the steak. Don’t over do it. The best way is to start with about a tablespoon of seasoning mix per pound of steak. Divide the amount between both sides. You can always add more seasoning after the steak is cooked if you need a bit more.

Heat your grill or pan to the correct temperature before adding the steak. Adding the steak to a hot grill or pan helps to seal in the juices.

Cook the steak to your level of doneness, transfer it to a plate and allow it to rest for a few minutes. This allows the meat fibers to relax and the juices in the meat to be more evenly distributed. Your steak will taste more tender and juicy this way.
