Trying to find fast and easy breakfast when you are on the keto diet can be a bit of a challenge. This on the go keto breakfast sandwich just might be what you are looking for.

Gone are the days of quick to make toast and bagels. There are no more cereal bars to toss in your bag or lunch box. A bowl of cereal can be a problem. Now there are some keto cereals coming on the market but a bowl of cereal topped with milk won’t work if you are trying to run out the door to start your day.

Some opt for “bulletproof” or butter coffee to provide them with energy in the morning.

If you are lucky and can eat on break or even at your desk perhaps you might bring some eggs and bacon to toss in the break room microwave.

Muffins make a great grab and go breakfast. You could try these Blueberry, Lemon Poppyseed, Peanut Butter Chocolate Chip, Pumpkin Spice, Raspberry Lemon or even Praline Cinnamon Muffins. It’s easy enough to whip up a batch on the weekend so you can have them on hand during the week.

What about breakfast sandwiches? Is it possible to make a keto breakfast sandwich if traditional bread, English muffins and bagels are being avoided? Yes!

Easy Keto Breakfast Sandwich

If you’ve ever wanted to make yourself a delicious breakfast sandwich to take with you for a keto breakfast on the go then you need to check this recipe out! You will be amazed at how easy it is to prep a weeks worth of breakfast.

To make these on the go breakfast sandwiches I used a store made sausage patty. It helps cut down the amount of time to put the recipe together. There are lots of them currently being sold so look around for a brand that suits your needs.

I know not everyone is interested in using store bought items. If you would rather make your own that is easy enough too and this recipe for Keto Maple Breakfast Sausage will show you how easy it is to do!

These are my go to store bought sausage:

These can be purchased at Walmart and have 20 patties in the bag. This makes 10 keto to go breakfast sandwiches.

I generally make them all up. I leave a few in the refrigerator to use during the week and put some in a freezer bag to use the following week. Decide how many sandwiches you would like to prep and purchase the number of sausage patties you need to make them all at once. You will need 2 for each sandwich.

To make these keto breakfast sandwich you will need the following (amounts are per sandwich except for the eggs as they are made in a single pan):

  • Sausage patties – 2 for each sandwich
  • Eggs – 10 eggs
  • Cheese – your choice of cheese, 1 slice per sandwich
  • Salt, pepper, choice of seasonings for eggs
  • Foil

Start by making a square of foil for each sandwich you intend to make.

Think production line when it comes to meal prep. Get everything ready then put the sandwiches together.  In this case I get 10 pieces of foil ready for sandwich making.

Next get the eggs ready.

I bake them in the oven in a pan so I can move on to doing other things. Start preheating the oven to 350F. Grease a 9 X 13 pan with butter, your choice of oil or nonstick spray. Scramble 10 eggs in a bowl.

Pour the eggs into the pan and sprinkle salt and pepper (to your taste) over the top. If you would like to use other seasonings you can add them as well.  I used a Cajun seasoning blend on mine.

Bake for 12 to 15 minutes or until the eggs are set.

Remove them from the oven and allow them to cool. Cut the eggs into 10 pieces.

To assemble the keto breakfast sandwiches:

On a piece of foil layer your sandwich items in the following order: Sausage patty first

Add the baked egg on top of the sausage.

Add a slice of cheese to the sandwich.

Top the breakfast sandwich with a second sausage patty

Now take the edges of the foil and wrap the sandwich up.

If you are using them in the next 5 days you can keep them in the refrigerator until needed. If not then place the wrapped sandwiches into a freezer bag and mark with the name of the item and the date. I use a permanent marker to write on the outside of the freezer bag.

To heat up the keto breakfast sandwiches:

I make the sandwiches with the frozen sausage patties but allow it to thaw in the refrigerator before heating up.

If you have these in the freezer take the number of sandwiches you need out the night before and allow them to thaw in the refrigerator. It makes heating them up easier. You won’t have to microwave them longer to heat the sausage while over heating the egg/cheese in the process.

To heat up these breakfast sandwiches:

Remove the sandwich from the foil and place on a plate or napkin.

Microwave for 45 seconds to 1 minutes. The ingredients were already cooked so you just need to warm them up.

Place the heated sandwich back into the foil and turn the edges down so you can hold the sandwich while you eat it.

If you are making these before heading out the door in the morning simply wrap the sandwich back up to keep it warm if eating on the go.

I often take these to work with me and heat them up there while on break. Being wrapped in foil makes it easy to toss one into my lunch bag before heading out the door in the morning.
