Salmon Fillets (2 fillets about 6 ounces each) – skin removed, diced into pieces about 1 inch in size.
Olive Oil – you’ll want to use a light flavored oil such as olive oil or a vegetable oil for this recipe.
Lemon Juice – you can use freshly squeezed lemon juice or bottled juice.
Garlic – mince 3 cloves of garlic. You can swap it out for 2 teaspoons jarred, minced garlic or about 3/4 teaspoon of garlic powder.
Salt and Black Pepper – Just a small amount added helps to bring out the flavor in the salmon.
Smart Cooking Tip: Want crispier bites? Toss them in 1 tsp of cornstarch or panko crumbs before cooking.
How to Make Salmon Bites
Step 1: Prep the Salmon: Cut the salmon into 1-inch cubes and pat them dry with paper towels. Removing extra moisture helps them crisp up beautifully.

Step 2: Season and Marinate: Whisk the olive oil, salt, pepper, minced garlic and lemon juice in a medium bowl. Add the salmon cubes and toss gently to coat. Let sit for 5–10 minutes or cover the bowl and refrigerate for up to 30 minutes.
Step 3: Bake in the oven – Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil and lightly oil it. Spread salmon cubes in a single layer. Bake for 15 minutes, turning once halfway through.

Optional: Broil for 1–2 minutes for a crisp finish.

Step 3: Air Frying – Preheat your air fryer to 400°F (200°C). Place the salmon in a single layer in the air fryer basket. Don’t overcrowd or the pieces will not cook evenly. Air fry for 7 to 9 minutes, shaking the basket or turning the pieces halfway through cooking. Check to see that the pieces are opaque and that they flake easily with a fork (internal temperature should be 145°F). If your fish isn’t opaque try air frying for another 2 minutes and check again.
Time Saving Tip: While the salmon cooks, air fry or roast vegetables in a second basket or oven tray for a full meal.
How to Store & Reheat
Refrigerator: Store cooled salmon bites in an airtight container for up to 3 days.
Freezer: Lay cooked bites on a parchment-lined tray and freeze for 1 hour. Then transfer to a freezer bag. Keeps up to 2 months.
Can I cook salmon bites from frozen?
Yes you can! Just add 2–3 minutes to the air fryer time. If the salmon pieces are large, thaw partially for best texture.
To reheat your salmon bites:
- Air fryer – 350°F for 3 minutes
- Oven – 325°F for 5–7 minutes
- Skillet – Medium heat for 2 minutes per side
- Microwaving – while you can microwave them I tend to pass on that as it makes the salmon bites rubbery and not crispy like the other heating methods.
