What I Ate Wednesday 3

It’s that time of the week again. Time for another round of joining in on the What I Ate Wednesday linkup over at Peas and Crayons. Can’t wait to see what everyone else ate for the day.

Once again, chem class is still in session so it’s another breakfast on the go and a packed lunch. I started the day with this:

Breakfast: cup of coffee while I got ready for school. There’s more coffee in the thermos. We are working on a drastically reduced budget while I finish school so I save money by bringing my own coffee instead of visiting the schools cafe. This thermos is the most incredible thermos I’ve ever used. The brand name is Copco and it was around $12 to buy it. I used it all throughout the winter (I would leave my coffee in the car for the trip home from school) and it would still be hot even after sitting in a freezing car for hours!  Perhaps I’m odd but I still drink hot coffee even in the blazing summer too so this thermos is still going strong. Talk about helping to save some cash.

My breakfast on the go consisted of two egg muffins made with spinach, tomatoes and feta cheese. For as much as I like my coffee hot I’m ok with eating my eggs cold. Weird, I know.

Here’s lunch and my snack on the ride home:

Half of a sweet and spicy Starkist tuna creations package with some pasta salad (rotini, peppers, onions, olive, salami and provalone cheese with an olive oil and red wine vinegar dressing). Strange combo but I’m working with leftovers here. Protein is an absolute at every meal especially if I’m eating something like pasta. In the end I ate the tuna and abandoned part of the pasta in order to eat some of the yummy watermelon which is in the other container.

Sipped throughout the afternoon, along with plenty of water,  CLICK Mocha protein shake made with half water and half unsweetened almond milk.

Snack bag containing dry roasted peanuts, almonds, pistachios and walnuts with a few craisins added in. Only 1/3 cup of nuts in the bag. The small snack bags are great for portion control. Nuts are something I could just mindlessly eat in large amounts.

Dinner was soup made with chicken, leeks and several potatoes. Topped it with some bacon crumbles. I cooked the bacon today for the soup as well as for BLT salad tomorrow. You would be amazed at how many sandwiches taste great as a salad.

Snack was part of a granny smith apple and some homemade honey cashew butter. Good stuff.

      While some people see soup as a fall/winter only thing I love it year round. Even if it’s blazing hot outside.
