Ingredients

  • 2 cups Pumpkin peeled, diced into 1 inch cubes
  • 1 large Potato peeled, diced into 1 inch cubes
  • 1 pound Chicken Thighs boneless, skinless, cut into bite sized pieces
  • 1/4 cup olive oil
  • 1 tablespoon Paprika Hot or Smoked
  • 1 tablespoon sriracha sauce
  • 1/2 teaspoon Chili Flakes or Crushed Red Pepper
  • Salt to taste

Instructions

  • Add diced pumpkin, potatoes, chicken, paprika, chili flakes, sriracha, and olive oil to a large bowl. Season to taste with salt. Combine well.
  • Set aside and let marinate for 30 minutes in the refrigerator.
  • Preheat the oven to 400 degrees.
  • When ready to bake pour the marinated chicken into a 9 x 13 inch baking dish. Cover with aluminum foil. Bake for 20 minutes.
  • Remove the foil and bake until golden brown and tender, approximately 15-20 additional minutes. Remove from oven. Serve and Enjoy!
