Equipment

  • Muffin Liners
  • Large mixing bowl
  • Mixing spoon

Ingredients

  • 3 large eggs
  • 1 1/2 cup Almond Flour
  • 1/3 cup Swerve or other sugar free sweeteners such as Splenda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Salt
  • 1/4 cup butter melted
  • 1/2 cup Heavy Whipping Cream
  • 1 cup shredded carrots
  • 1/2 cup Pecans coarsely chopped

Instructions

  • Preheat the oven to 350F.
  • Line muffin tin with paper cups.
  • In a large bowl mix all the dry ingredients together.
    1 1/2 cup Almond Flour, 1/3 cup Swerve, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon Salt, 1/2 cup Pecans
  • Make a well in the center of the dry ingredients and add the wet ingredients.
    3 large eggs, 1 teaspoon vanilla extract, 1/4 cup butter, 1/2 cup Heavy Whipping Cream, 1 cup shredded carrots
  • Scoop out into muffin cups and bake for 25- 30 minutes or until a toothpick inserted into the center comes out clean.

Notes

While Swerve is listed in this recipe I have tested the recipe out with both Swerve and Splenda. The recipe will work with both sweeteners without a change in texture. 
The recipe should work well with other sweeteners that are made with erythritol as this is what Swerve is made of. But I have not tried other types of sweeteners.
