Preheat the oven to 350F.
Line muffin tin with paper cups.
In a large bowl mix all the dry ingredients together.
1 1/2 cup Almond Flour, 1/3 cup Swerve, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon Salt, 1/2 cup Pecans
Make a well in the center of the dry ingredients and add the wet ingredients.
3 large eggs, 1 teaspoon vanilla extract, 1/4 cup butter, 1/2 cup Heavy Whipping Cream, 1 cup shredded carrots
Scoop out into muffin cups and bake for 25- 30 minutes or until a toothpick inserted into the center comes out clean.
