Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together cake mix, oil, and eggs until well incorporated.
1 box Chocolate Cake Mix, 2/3 cup vegetable oil, 2 large eggs
Using a mini cookie scoop, place rounded scoops of cookie dough on the prepared baking sheet. Using your hand, lightly press down the cookies so they spread out instead of staying rounded.
Bake for 8-10 minutes. Remove the baking pan from the oven and allow the cookies to cool on the pan for at least 5 minutes before trying to remove them. Transfer the cookies to a wire rack to cool completely.
In a small bowl microwave white chocolate and coconut oil at 30 second intervals, stirring between heating, until melted.
1 cup white chocolate chips, 1 teaspoon Coconut Oil
Spoon the white chocolate on the tops of the cookies and smooth it out with the back of the spoon.
While the chocolate is still warm sprinkle the crushed peppermint candies on top of the cookies. Allow the chocolate to firm up. Serve and enjoy!
