These chocolate peppermint cake mix cookies are created with your favorite cake mix and a handful of pantry staples. Rich and fudgy they are topped with white chocolate and sprinkled with peppermint candy bits. They are just what you need when you are short on time but still want to bake delicious cookies.

Ingredients

  • 1 box Chocolate Cake Mix
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1 teaspoon Coconut Oil
  • 15 Peppermint Candies crushed

Instructions

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together cake mix, oil, and eggs until well incorporated.
    1 box Chocolate Cake Mix, 2/3 cup vegetable oil, 2 large eggs
  • Using a mini cookie scoop, place rounded scoops of cookie dough on the prepared baking sheet. Using your hand, lightly press down the cookies so they spread out instead of staying rounded.
  • Bake for 8-10 minutes. Remove the baking pan from the oven and allow the cookies to cool on the pan for at least 5 minutes before trying to remove them. Transfer the cookies to a wire rack to cool completely.
  • In a small bowl microwave white chocolate and coconut oil at 30 second intervals, stirring between heating, until melted.
    1 cup white chocolate chips, 1 teaspoon Coconut Oil
  • Spoon the white chocolate on the tops of the cookies and smooth it out with the back of the spoon.
  • While the chocolate is still warm sprinkle the crushed peppermint candies on top of the cookies. Allow the chocolate to firm up. Serve and enjoy!
