Grease a baking dish with oil. Put salmon in it. Sprinkle the salmon with salt, black pepper and dried thyme.

In a bowl, mix the Dijon and whole seed mustards, honey and chopped garlic. Spread the mixture over the top and sides of the salmon. If you have time, you can cover the baking dish with cling film and leave to marinate for 15 minutes.

Place the salmon baking dish in the preheated oven. Bake at 340F for 20-25 minutes. It is important not to over dry the salmon so that it does not lose its juiciness and tenderness. Remove from oven, let sit 5 minutes before cutting into serving sized pieces.
