Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 16 ounces Andouille sausage or Smoked Beef sausage, sliced
  • 1 - 14 ounce fire roasted diced tomatoes canned
  • 3 tablespoons tomato paste
  • 16 ounces Green Bell Pepper chopped
  • 1 Onions diced
  • 3 cloves Garlic minced
  • 1 1/2 tablespoon Cajun Seasoning
  • Salt and Pepper to taste

Instructions

  • Place the peppers and onions into the bottom of the crockpot.
    16 ounces Green Bell Pepper, 1 Onions
  • Add the sliced sausage on top of the peppers and onions. 
    16 ounces Andouille sausage
  • Add the tomato paste, tomatoes and garlic on top of the peppers and onions.
    1 - 14 ounce fire roasted diced tomatoes, 3 tablespoons tomato paste, 3 cloves Garlic
  • Sprinkle 1 tablespoon of the Cajun seasoning on top. 
    1 1/2 tablespoon Cajun Seasoning
  • Mix the vegetables and sausage together.
  • Place the chicken breasts on top of the vegetable/sausage mixture and sprinkle with 1/2 tablespoon of Cajun seasoning mix.
    1 pound boneless, skinless chicken breasts
  • Cover and cook on low for 6 to 8 hours or until the chicken is tender and can be shredded.
  • Add salt and pepper to taste.

  • Serve over rice, keto shirataki rice or riced cauliflower.

Notes

Sausage: Use smoked beef sausage or Andouille sausage
Peppers: Use green or a combination of colored peppers. You can also use frozen sliced peppers in place of fresh.
Tomatoes: You can replace the can of diced tomatoes with crushed tomatoes if desired.
Add in extra vegetables if desired. It tastes delicious no matter what you add in. Try spinach, collard greens, zucchini and squash. This is a great way to use up whatever you have on hand.
