Ingredients

  • 1 small red onion diced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • Juice of 1 lemon
  • 2 packages of Liviva shirataki rice
  • 1/3 cup feta cheese
  • salt and pepper to taste

Instructions

  • In a skillet melt the butter and add the olive oil.
  • Add in the diced onion and minced garlic. Saute until softened.
  • While onion/garlic are cooking rinses off the shirataki rice in a strainer.
  • When onion is soft add in the shirataki rice and mix well.
  • Add in the juice of 1 lemon
  • Turn off heat and stir in feta.
  • Add salt and pepper to taste
