Ingredients

  • 1 Lemon juice and zest of
  • 3 Eggs
  • 1 1/2 cups Almond Flour
  • 1 tsp Baking powder
  • 1/2 tsp Lemon Extract
  • 2 tbsp Poppyseeds
  • 1/3 cup Swerve
  • 1/4 cup Butter melted
  • 1/2 cup Half and half

Instructions

  • 1. Preheat the oven to 350 F.
  • 2. Line the muffin pan with cupcake liner or grease the pan.

    3. Mix the dry ingredients together.

    4. Mix the wet ingredients together.

    5. Combine the two until just mixed.

    6. Portion into the cupcake cups.

    7. Bake for 25 to 30 minutes or until a toothpick inserted comes out clean.
