Dice the onion, celery and bell pepper.
Chop the spinach.
If using a fresh zucchini make it into zoodles.
Chop your chicken.
Place your olive oil or butter a large saucepan.
Add the onion, celery and bell pepper. Saute until just beginning to soften.
Add in the chopped chicken, chicken broth, coconut milk, spinach, zoodles and curry powder.
Continue cooking until the vegetables have softened.
Add salt and pepper to taste.
