How To Make Keto Curry Chicken Zoodle Soup (without a recipe!)

You can have a delicious bowl of keto curry chicken zoodle soup on the table in less than 30 minutes. It doesn’t take a lot of steps or fancy ingredients. You may even have them all in your kitchen right now. Even better…. I’m about to show you how to do it without having to measure out every ingredient.

What’s a meal template you might ask?

A template is a pattern that can be followed again and again. You know what the end result will be because you’ve made the item before and know that if you follow the template that it will turn out well again.

This post will give you a start on learning how to cook without a recipe as well as how to alter recipes easily. But before continuing on you should at least read the initial post to get a good grasp on where this is going.

Over the years I started to realize that I used many of the same basic recipes again and again. I was familiar with them. I knew how to cook them and how long it would take to make them.

But I wanted variety. I didn’t want to make the same dishes over and over again.

Over time I began to realize that I could update the seasonings to get a particular “flavor theme”.

I also could add in various ingredients frequently found in that “flavor theme”. By making a few changes the dish would suddenly seem new.

I’ll give you an example. Think about Indian dishes. What sort of flavors and ingredients do you find in them? How about curry powder, jasmine rice, chicken, beef and lamb? What about other herbs and spices such as onion, garlic, ginger, garam marsala and corriander? How about other ingredients such as yogurt, coconut milk, tomatoes, spinach, bell peppers and chiles? These are often found in both Indian curry and Thai coconut curry dishes.

If I wanted to take a dish that I was already familiar with and change the taste up a bit to create an Indian dish then perhaps I would want to use some of these ingredients. With this in mind, ingredients in a base recipe can be swapped out to create a new recipe without having to learn to make a new recipe.

Here’s how to swap out the ingredients in the basic Keto Chicken Zoodle Soup recipe to create a Keto Curry Chicken Zoodle Soup.

This recipe uses the same basic technique as this coconut curry soup recipe. The only difference is some of the ingredients have changed.

To create a soup with a curry flavor we simple replace some of the ingredients.

Some of the swaps made include:

  • Bell pepper used in place of the carrot.

  • Coconut milk replaces some of the chicken broth.

  • Curry powder replaces the oregano and basil. You can also use a curry paste or a green curry paste if you have a store bought variety on hand. Like it spicy? Then try using a red curry paste.

This soup recipe is made the same way as the other zoodle soup recipe. The only difference is some of the ingredients are swapped. The taste however is entirely different.

Start by placing your saucepan or stock pot over a medium heat and adding in your olive oil, coconut oil or butter.

Add in the diced onion, celery and bell pepper. For this soup I had an orange pepper on hand but you could use green, red, orange or yellow. Saute the vegetables for 4 to 5 minutes stirring to keep them sticking to the bottom of the pot.

While this is cooking dice your chicken. You can use any type of chicken meat…. cooked boneless chicken breasts or thighs or even rotisserie chicken. This is what I used as I had left over rotisserie chicken on hand.

Add the diced chicken, 2 to 3 cups of chicken broth, your zoodles, a can of coconut milk and 1 1/2 tablespoons of curry powder to the pot. Actually, you may find that you want a stronger curry flavor and may want to add 2 tablespoons full!

Meal template tip:

If you’re unsure of how much seasoning to add try adding some in, taste and then add more if you want it. In this case add in about 1 1/2 tablespoons. If you want a stronger flavor then add in a bit more.

Remember you can always build up flavor but you can’t take it back out if you put too much!

While the soup is cooking chop up your spinach. You can use fresh spinach or you can use frozen. Either one will work out fine. If you are using fresh whole spinach then you want to chop it up into smaller pieces/shreds. Grab two big handfuls of the spinach and chop it up.

Like spinach? Then add some more. You won’t hurt the soup if you use more or less.

What if you don’t like spinach? It’s alright to leave it out. The soup won’t be ruined if you do. This is the great part about a meal template. Even if some of the ingredients are changed or left out the meal will still taste good.

Add the spinach to the soup pot and allow the soup to cook until the vegetables are softened.

Taste the soup and add salt and pepper to your personal taste.

Looking to change up the flavor a little? Add some lime juice to the soup. The juice from half a lime is usually enough to give the soup some extra flavor.

How To Make Keto Curry Chicken Zoodle Soup (without a recipe!)

Create your own zucchini zoodles or use premade zoodles (fresh or frozen) for this soup. You can use any color bell pepper you would like (green, red, orange or yellow). You can easily swap out vegetables in this easy to make keto coconut curry soup.

Ingredients

  • 1 medium onion diced
  • 2 stalks celery diced
  • 1 bell pepper diced
  • 2 big handfuls of fresh spinach or about 1/3 of a bag of frozen chopped spinach
  • Olive oil or butter
  • 1 zucchini made into zoodles zucchini noodles or 1 package purchased zoodles
  • 2 big handfuls of chopped cooked chicken about 2 cups
  • 2-3 cups of chicken broth or 1/2 of a 32 ounce container of broth or 1 - 15 ounce cans of chicken broth
  • 15 ounce can of coconut milk
  • 1 1/2 tablespoons curry powder
  • salt and pepper

Instructions

  • Dice the onion, celery and bell pepper.
  • Chop the spinach.
  • If using a fresh zucchini make it into zoodles.
  • Chop your chicken.
  • Place your olive oil or butter a large saucepan.
  • Add the onion, celery and bell pepper. Saute until just beginning to soften.
  • Add in the chopped chicken, chicken broth, coconut milk, spinach, zoodles and curry powder.
  • Continue cooking until the vegetables have softened.
  • Add salt and pepper to taste.
