Ingredients

For Ham Broth:

  • 1 Ham Bone or ham hock
  • 1 small Onion
  • 1 carrot shredded or diced
  • 2 stalks celery cut into 4 pieces
  • 8 cups water

For Soup:

  • 1 medium Onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 14.5 ounce diced tomatoes
  • 3 bay leaves
  • 2 teaspoons parsley
  • 2 teaspoons Thyme
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • 8 cups Ham broth
  • 8 ounces Ham from the ham bone
  • 20 ounces 15 Bean Soup Mix

Instructions

Make the broth:

  • Add the ham bone, onion, celery, carrots and seasonings into the slow cooker. Add water and cook on high for 8 to 10 hours.

  • Strain out solids and use broth to make the 15 bean soup.

To make soup:

  • Add the diced onions, carrots and celery to the crockpot. Mix in the ham meat as well as the diced tomatoes, beans and seasonings. If using a bean soup mix that also includes a seasoning add that as well.
    1 medium Onion, 2 carrots, 2 stalks celery, 14.5 ounce diced tomatoes, 3 bay leaves, 2 teaspoons parsley, 2 teaspoons Thyme, 1 teaspoon Garlic Powder, 8 cups Ham broth, 8 ounces Ham, 20 ounces 15 Bean Soup Mix
  • Set the slow cooker to LOW for 8-10 hours or HIGH for 5-6 hours or until the beans are soft and tender. Add salt and pepper to taste.
