Easy One Pan Gnocchi, Sausage and Vegetables Recipe

This easy-to-make dinner includes a delicious mix of veggies, gnocchi with sausage all cooked to perfection in the over or the air fryer. It's such as easy meal to make and the whole family loves it!

Ingredients

  • 16 ounces Smoked Sausage sliced into 1/2 inch thick rounds
  • 12 ounces Gnocchi ready made
  • 1 pint Cherry Tomatoes
  • 8 ounces Broccoli florets
  • 1 Red Bell Pepper seeded and coarsely chopped
  • 1 Yellow Bell Pepper seeded and coarsely chopped
  • 1 medium Red Onion peeled and coarsely chopped
  • 1/2 cup Italian Dressing
  • 1/2 cup Parmesan cheese shredded
  • Nonstick Spray

Instructions

Oven Directions:

  • Preheat the oven to 400 degrees. Spray baking 2 baking sheet swith non-stick spray or line with parchment paper.

  • In a large bowl mix together the smoked sausage, gnocchi, tomatoes, broccoli florets, red bell pepper, yellow bell pepper and red onion.
    16 ounces Smoked Sausage, 12 ounces Gnocchi, 1 pint Cherry Tomatoes, 8 ounces Broccoli, 1 Red Bell Pepper, 1 Yellow Bell Pepper, 1 medium Red Onion
  • Pour Italian dressing over the mixture in the bowl.
    1/2 cup Italian Dressing
  • Spread evenly over the baking sheets Bake 15 to 20 minutes.
  • Remove from the oven, stir, spread out evenly and return to the baking sheets to the oven to bake another 10 minutes or until the vegetables are tender.
  • Remove from oven and divide the shredded parmesan cheese over the top. Serve and Enjoy!

Air Fryer Directions:

  • Follow the above steps to prepare the ingredients through step 3.
  • Preheat your air fryer according to your model's directions.
  • Place half of the gnocchi mixture (see air fryer note below) into the air fryer basket. Spread out in an even later. Cook in the air fryer at 375 degrees for 12 minutes.
  • Remove the cooked gnocchi and sausage from the air fryer basket and repeat the process with the remaining mixture.
  • Diving the shredded parmesan cheese over the top of the gnocchi and sausage. Serve and enjoy!

Notes

Air fryer tip:
This recipe was made in a 7 quart air fryer. If you have a smaller sized air fryer you may need to divide the mixture into 3 batches to ensure that everything is evenly cooked.
