This keto Caesar Salad Dressing is so tasty you will never want to return to store bought dressing again. Making your own dressing is a great way to avoid hidden carbs.
Hidden carbs in salad dressing?
You would be amazed at all the places carbs from sugar, starches and other ingredients can be found. They show up in strange and unexpected places. Like a full fat salad dressing.
Often store bought dressings include added sugars and starches to help keep the dressings from separating and to maintain the texture of the dressing as it sits on the store shelf.
When you make your own dressing you have control over the ingredients. You don’t need to add in unnecessary ingredients to help maintain taste and texture because it’s not going to be sitting around for months before using it. This keto Caesar salad dressing can be whipped up in minutes!
To keep the oil from separating from the other ingredients Dijon mustard is used instead of raw eggs. This helps to maintain the texture of the dressing.
Anchovy fillets are included in Caesar salad dressings. Since I don’t usually eat anchovy fillets, and have no desire to have half a container of them sitting in my refrigerator waiting to find some other use I went with anchovy paste.
You can find anchovy paste in most grocery stores. Look in the same section as the canned anchovies, sardines and tuna.
You might also find it in the salad dressing section. It all depends on your local grocery store set up.
You don’t use much of the paste and one tube will make several batches of dressing. Store the left over in your refrigerator until you need it again.
