Ingredients for Chocolate Peppermint Cookies
- Boxed Cake Mix – use your favorite chocolate cake mix to make this recipe. I like Devil’s Food Cake but Dark Chocolate or even German Chocolate is also good.
- Vegetable Oil – use your favorite light flavored vegetable oil to make these cookies.
- Eggs – choose large sized eggs for this recipe.
- White Chocolate Chips – I like to use the vanilla flavored white chocolate chips. You can swap these out for other baking chips such as Ghirardelli Peppermint Chunks or Andes Peppermint Crunch Baking Chips.
- Coconut Oil – a little bit of oil is mixed into the white chocolate chips to make them easier to spread on the cookies. Coconut oil works well and doesn’t add any flavor to the melted chips. You can also use another neutral flavored oil such as canola oil.
- Peppermint Candies – use your favorite peppermint candy such as Starlight mints or candy canes. The candies are crushed up using a rolling pin or some other heavy object.

If you can’t find bags of crushed up candy cane pieces at local stores there are several different brands available online at Amazon. You can buy single packages of crushed candy canes (Amazon affiliate link) or multiple packs if you are making several recipes using them.
How to make this Chocolate Peppermint Cookie Recipe:
Pre heat oven to 375 degrees F. Line a baking sheet with parchment paper.
Step 1: In a large mixing bowl, whisk together cake mix, oil, and eggs until well incorporated.
Step 2: Using a mini cookie scoop, place rounded scoops of cookie dough on the prepared baking sheet. Using your hand, lightly press down the dough balls so they spread out instead of staying rounded.
Step 3: Bake for 8-10 minutes. Remove the baking pan from the oven and allow the cookies to cool on the pan for at least 5 minutes before trying to remove them. Transfer the cookies to a wire rack to cool completely.
If you are using parchment paper on your baking pan then allow the cookies to cool for at least 5 minutes. Then transfer the piece of parchment, with the cookies still on them, to a wire rack to cool completely.
Step 4: In a small bowl microwave white chocolate and coconut oil at 30 second intervals, stirring between heating, until melted.
Step 5: Spoon the white chocolate on the tops of the cookies and smooth it out with the back of the spoon.
Step 6: While the chocolate is still warm sprinkle the crushed peppermint candies on top of the cookies. Allow the chocolate to firm up. Serve and enjoy!
How to store Chocolate Peppermint Cookies:
Store any leftover cookies at room temperature in an airtight container. They store well and make a great addition to a holiday cookie tray, a homemade gift basket or even packaged up to be passed out at a cookie exchange party.
Tips for baking the best Chocolate Peppermint Cookies:
Cool cookies before removing – Cool the cookies before trying to remove them from the baking pan. Cake mix cookies come out of the oven with a soft, pliable texture. If you try to remove them while they are still hot they will end up breaking apart. Allow the cookies to cool down before removing them.
Cool baking pan between uses – allow the baking pan to cool down before adding more cookie dough to bake to the pan. If the pan is hot the cookie dough will spread quickly. This will make the finish cookies thinner and can contribute to the bottom of the cookie over cooking.
I like to use two baking pans when I make cake mix cookies. One pan can be in the oven baking and the other is cooling down before more dough is placed on the pan.
Recipe Variations:
- Add peppermint extract – if you really like peppermint flavor then add in 1/2 a teaspoon of peppermint extract to the other ingredients when making the cookie dough. It will really kick up the peppermint flavor.
- Roll the dough in crushed peppermint candies – crush up some additional candies and roll the balls of cookie dough into the crushed candy. Place the dough on the cookie sheet and gently press to flatten them a bit. Follow the other instructions after baking.
- Swap out the cake mix – try using a different type of chocolate cake mix. For this easy recipe I typically use a Deviled Food cake mix. You can swap it out for your favorite type of chocolate cake mix.
For those who aren’t chocolate lovers, but still love peppermint, try something different such as a white cake mix, yellow cake mix or even funfetti cake mix. All of them taste great with peppermint.
