Easy Baked Pancake Muffins Recipe (Apple Cinnamon)

If you love the flavor of pancakes then you will want to whip up this easy Baked Pancake Muffins Recipe.

I’m a fan of traditional pancakes but there are plenty of times that I don’t want to deal with having to pan cook a batch of them. This is where this easy pancake muffins recipe comes in.

I just make a big batch of this pancake batter, use a cookie scoop to portion the batter into muffin tins and pop them in the oven. In less than 15 minutes I’ve got a bunch of pancake muffins that I didn’t have to carefully watch cooking in a pan.

While I love easy to make recipes I also love recipes that save me time. This recipe does both! Great for meal plan and even creating freezer meals. They are perfect for busy mornings when you need to take breakfast on the go.

Apple Cinnamon Baked Pancake Muffins Recipe

They make an easy grab and go breakfast as well as a tasty snack. For this recipe I made Apple Cinnamon Pancake Muffins. But these are so easy to make these in different flavors. Check out the FAQ section below for more information.

For this recipe you can use a box of pancake mix or your favorite pancake mix recipe. Both work well.

Ingredients for Pancake Muffins:

Pancake Muffin Ingredients
  • Pancake Mix – use your favorite store bought or homemade pancake mix for this recipe
  • Egg – use large eggs
  • Butter – use your favorite salted melted butter. If you want to swap this out for margarine or even vegetable oil you can do that. We like to use butter for the added flavor.
  • Milk – you can use just about any type of milk for this recipe – whole milk, skim milk, almond milk, soy milk, etc. They will all work.
  • Apples – use your favorite type of apple for this recipe. I like to use apples that are more suited for baking such as Granny Smith, Macintosh, Cortland, Honeycrisp, Golden Delish, etc. These types of apples can stand up to baking and don’t become soft and mushy. I like to leave the skin on the apple and then shred them.
  • Spices – this recipe uses both cinnamon and nutmeg. They go great with the apples. Don’t have nutmeg on hand? You can always swap it out for an equal amount of cinnamon.

How to make Apple Cinnamon Pancake Muffins:

Prepare your 12-cup muffin pan by greasing the pan with butter or spray with nonstick cooking spray.

Preheat the oven to 350 degrees. 

Step 1: In a large bowl combine pancake mix with all the other ingredients and mix well with a spatula. 

Step 2: Spoon muffin mix into the muffin cups using a 1/3 cup measuring cup or use a mini cookie scoop to quickly portion out the batter.

If you are adding extra toppings you can sprinkle them on now (see the FAQ section below for more information).  

Step 3: Place in oven and cook for 12-14 minutes or until the tops are golden brown and a toothpick inserted into the muffins comes out clean.

Remove and let sit until cool.

Serve with pancake syrup on the side for dipping.

How to store Pancake Muffins:

Store your extra muffins in an airtight container or a storage container in the refrigerator for 3 to 5 days.

You can quickly reheat these muffins in the microwave for about 20 seconds or in the air fryer for 2-3 minutes at 350 degrees.

Can I use Bisquick Mix to make Pancake Muffins?

Yes you can!

Bisquick is designed to be used to make pancakes, waffles, biscuits and more. Since it’s used to make a wide range of baked good, some of which aren’t sweet such as biscuits, you will want to add a bit of sweetener. Pancake batter is slightly sweetened.

Swap out an equal amount of Bisquick in place of the pancake mix. Add 2 teaspoons of sugar (use white or brown sugar) to the batter to give it that slightly sweet pancake taste. Follow the remaining directions for the recipe.

Pancake Muffin Mix-Ins:

While I used grated apples and cinnamon for these pancake muffins you can easily make a few simple swaps to create a wide range of pancake muffin flavors. Try using some of your favorite toppings.

Swap out the grated apple, cinnamon and nutmeg for the following to make even more delicious muffins.

Chocolate chips, butterscotch chips, white chocolate chips, peanut butter chips – well you get it. Add about 1/3 of a cup of your favorite type of chip to the batter and 2 teaspoons of vanilla extract. Add 2 or 3 chips to the top of each muffin before you bake them.

Sprinkles – turn your pancake muffins into confetti pancake muffins by swapping out the apple, cinnamon and nutmeg for 2 teaspoons of vanilla extract (or your favorite extract) and 1/3 cup of colorful sprinkles. Put a pinch of sprinkles on top of each muffin before baking.

Fresh Blueberries – You can do this one of two ways. Swap out the apples for about a 1/2 cup of blueberries to create blueberry muffins. Leave the cinnamon and nutmeg (the blueberry cinnamon combination tastes great) or swap out the spices and add in a teaspoon of vanilla extract.

Chopped nuts – you can add about 1/3 cup of chopped nuts to the apple cinnamon flavored batter. We like using pecans or walnuts for this recipe.

Ripe Bananas – you can mash a ripe banana up and mix into the batter. Add the cinnamon and nutmeg as well as 1/3 cup of chopped nuts. It will taste like banana nut bread but in muffin form. 

Can I freeze these pancake muffins?

Yes pancake muffins can be frozen. Place in a freezer bag and store in the freezer for up to 3 months.

Reheat them in the microwave, oven or air fryer. You can also allow them to thaw out at room temperature and eat them as they are.

These pancake muffins make a great addition to a packed lunch. I like to package them up in freezer bags with 3 or 4 muffins in each bag. I keep them in the freezer until it’s time to pack a lunch. I put the frozen muffins in the lunch bag. By the time lunch rolls around they have thawed and are at room temperature.

Can I use a mini muffin tin?

You sure can. What kid can resist mini pancake muffins?

Using a mini muffin tin turns these into cute little bite sized snacks. You will want to use no more than 2 tablespoons of batter in each tin. Also reduce the cooking time a bit for these smaller sized muffins. Try baking for 10 minutes and then test to make sure the centers are cooked by inserting a toothpick to see if it comes out clean.
